This Easy Spanish Rice recipe is remarkably simple to prepare, positively delicious, and comes together in about 25 minutes. It tastes just like the Spanish rice you’d find in a high-quality restaurant, perfect for any occasion!

Ingredients

  • Pinch of saffron for Spanish rice (approx. 1/8 tsp when ground)
  • 2 tbsp canola or vegetable oil
  • 1 large yellow onion, finely chopped (about 1 cup)
  • ½ red bell pepper, finely chopped (about ½ cup)
  • 2 garlic cloves, finely minced
  • 2 cups long-grain rice
  • 2 cups chicken or vegetable broth
  • 8 oz tomato sauce
  • 1 tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp ground cumin for Mexican rice (optional, if making Mexican version)
  • Salt and pepper to taste

Serving Garnishes

  • Green onions, finely chopped
  • Fresh cilantro

Instructions

  1. Prepare Saffron: Soak a pinch of saffron in a small bowl of hot water so it is ready to use. This allows its rich color and flavor to infuse the liquid.
  2. Sauté Aromatics: Heat the oil in a medium skillet over medium heat. Add the finely chopped onion and red bell pepper and cook until slightly soft and translucent, typically 2-3 minutes.
  3. Add Garlic: Stir in the minced garlic and continue cooking for another 1-2 minutes, or until the garlic is fragrant and the vegetables are tender. Be careful not to burn the garlic.
  4. Toast Rice: Add the long-grain rice to the skillet. Cook, stirring frequently for about 6-8 minutes, until the rice turns a light golden brown. This step enhances the nutty flavor and helps prevent stickiness.
  5. Combine Liquids & Seasonings: Stir in the broth, tomato sauce, chili powder, and dried oregano. Add the saffron (including its soaking liquid) if making Spanish rice, or ground cumin if opting for Mexican rice. Season with salt and pepper to taste.
  6. Simmer: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover the skillet tightly with a lid, and cook until all the liquid is absorbed, which usually takes about 8-10 minutes. Stir occasionally to ensure even cooking.
  7. Fluff & Rest: Remove the skillet from the heat, but keep the lid on for an additional 5 minutes to allow the rice to steam and become perfectly fluffy. Then, remove the lid and gently fluff the rice with a fork.
  8. Serve: Taste and adjust seasonings as needed. Serve immediately, garnished with fresh green onions or cilantro if desired.
  9. Storage: Store any leftovers in an airtight container in the refrigerator for up to 4-5 days.
