It’s funny how some recipes become a long-standing request in the household. My husband has been asking me to make quiche for nearly two decades – yes, twenty years of patient requests! I admit, I’m not entirely sure why I postponed it for so long. Unfortunately, he missed out on this particular batch while he was away working. Poor guy! However, the silver lining is that these quiche cups are so incredibly easy to make that I can now whip them up for him whenever the craving strikes. This recipe has officially become a staple in our home, much to his delight.

Bacon Cheddar & Spinach Quiche Cups are a perfect, savory brunch recipe that’s so easy to make. Baked in fluffy puff pastry- these mini quiches are delish! Perfect for Easter or Mother’s Day celebrations, you’ll want to make 3-4 batches to feed your crowd. But don’t worry, they are so simple & take less than 30 minutes.

Ingredients

  • 1 sheet thawed puff pastry
  • 4 large eggs- divided use
  • 1 cup + 2 tbsp half & half – divided
  • 1 cup fresh chopped spinach
  • 1 cup shredded cheddar cheese
  • 1/3 cup bacon bits
  • 1 tbsp minced onions
  • 3 tsp garlic powder
  • salt / pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it’s perfectly hot for baking.
  2. Carefully unfold the thawed puff pastry sheet and, using a sharp knife or pastry cutter, cut it into 9 equal squares.
  3. Gently stretch each pastry square just slightly and press it into the bottom and up the sides of an un-greased standard muffin tin well. This will form your quiche cup crust.
  4. In a medium-sized mixing bowl, whisk together 3 of the large eggs with 1 cup of half & half until well combined. Then, stir in the fresh chopped spinach, shredded cheddar cheese, savory bacon bits, minced onions, and garlic powder. Season generously with salt and pepper to taste.
  5. Carefully ladle the quiche filling mixture into each puff pastry-lined muffin well, filling each about three-quarters of the way full.
  6. In a small separate bowl, whisk together the remaining 1 egg and 2 tablespoons of half & half. This will be your egg wash.
  7. Using a pastry brush, lightly brush the exposed edges of the puff pastry with the egg wash. This will help them turn a beautiful golden brown and become extra flaky.
  8. Bake in the preheated oven at 400°F (200°C) for 18-23 minutes, or until the pastry is golden brown and puffed, and the quiche filling is set and lightly browned on top.
  9. Remove from the oven and let cool slightly in the muffin tin before transferring to a wire rack. Serve warm for the best flavor and texture. Enjoy your delightful quiche cups!
