Tender Slow Cooker Turkey Breast

Cooking turkey breast in a slow cooker is undeniably one of the simplest and most effective methods to achieve a perfectly moist and incredibly delicious main course. This technique minimizes the effort without compromising on taste or texture, yielding a turkey breast that’s consistently tender from edge to center.

What I particularly adore about this recipe is its sheer simplicity. It’s truly a “dump and go” style dish, perfect for those bustling holiday preparations. Imagine easily placing your seasoned turkey breast alongside a bed of aromatic vegetables into the slow cooker, then simply walking away as it cooks to perfection. There’s no constant basting, no worrying about overcrowding the oven, and minimal cleanup. I genuinely wish this effortless recipe had been around when I first started preparing holiday meals decades ago. It transforms what can often be a daunting task into a remarkably straightforward and enjoyable cooking process.

With very little prep work and no complex steps, anyone, regardless of their cooking skill level, can master this recipe and present a magnificent, moist turkey breast that will impress family and friends.

Why Choose a Slow Cooker for Your Holiday Turkey Breast?

The slow cooker, often underestimated for its holiday potential, is a true game-changer when it comes to preparing turkey breast. Its gentle, consistent heat environment is perfectly designed to lock in moisture, preventing the common culinary tragedy of dry, overcooked turkey. This method guarantees a beautifully tender result every single time, making it a reliable choice for your most important meals.

Beyond moisture retention, the slow cooker offers unparalleled convenience. It frees up your oven, which is often in high demand during holiday cooking for baking pies, roasting vegetables, or keeping other dishes warm. This organizational advantage significantly reduces holiday stress, allowing you to focus on other aspects of your meal or, better yet, spend more time with your loved ones. Furthermore, slow cooking often requires less supervision once set, allowing you to prepare other elements of your feast or simply relax while your turkey cooks itself to perfection.

Commonly Asked Questions About Slow Cooker Turkey Breast

How big of a turkey breast do I need for my meal?

When planning your holiday meal, ensuring you have enough turkey is key to a successful feast. While the USDA generally recommends about 1/2 pound (227 grams) of meat per person, this is often a generous estimate that guarantees plenty for seconds and abundant leftovers. For a more realistic serving size that minimizes waste while still providing enough, I suggest planning for 6-8 ounces (170-227 grams) of cooked turkey breast per person, especially if you’re serving a variety of other delicious side dishes.

A single whole turkey breast typically weighs between 3 to 6 pounds and can comfortably feed about 6-8 people. If your guest list is larger or you desire more leftovers, consider opting for two smaller turkey breasts rather than one exceptionally large one to ensure even cooking and easier handling in your slow cooker. For leftover planning, anticipate needing about 1/2 cup (120 ml) of cooked turkey per person. This amount is perfect for crafting delicious sandwiches, hearty soups, or other creative dishes in the days following your holiday meal, preventing food waste and extending the enjoyment of your turkey.

What internal temperature should turkey be cooked to for safety?

Food safety is paramount when cooking poultry. The most crucial rule for preparing a turkey breast, regardless of the cooking method, is to ensure it reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius). This temperature effectively kills any harmful bacteria, making the meat safe for consumption. While conventional ovens often require higher cooking temperatures, such as 450 degrees Fahrenheit, to cook quickly, a slow cooker uses a much gentler, consistent heat.

The beauty of slow cooking lies in its ability to slowly and evenly cook the turkey breast, retaining moisture and flavor. The trapped heat and steam under the slow cooker lid create an ideal environment for tender results. To maintain this consistent temperature and cooking efficiency, it’s best to resist the urge to frequently open the lid, as each peek can release heat and extend cooking time. Always use a reliable meat thermometer inserted into the thickest part of the breast to confirm it has reached 165 degrees F before serving. This ensures both safety and optimal tenderness.

How long does it take a turkey breast to thaw safely?

Proper thawing is a critical step to ensure both food safety and the best cooking results for your turkey breast. A frozen turkey breast typically requires about 24-48 hours to fully thaw in the refrigerator, allowing approximately 24 hours for every 4-5 pounds of turkey. The refrigerator method is always recommended as the safest and most reliable way to thaw poultry.

If you’re pressed for time, a cold water bath can expedite the thawing process. Place the turkey breast, still in its original packaging or a leak-proof bag, into a sink or large container filled with cold water. It’s essential to change the water every 30 minutes to keep it cold and prevent bacterial growth. Do NOT use warm or hot water, as this can bring the turkey into the “danger zone” for bacteria. I strongly advise against thawing any poultry, especially a turkey breast, in the microwave, as it can lead to uneven thawing and potentially precooking parts of the meat, compromising both texture and safety.

Can I slow cook a skin-on turkey breast?

Yes, you absolutely can slow cook a skin-on turkey breast. The skin will help to protect the meat and enhance its flavor during the long cooking process. However, it’s important to manage expectations regarding the skin’s texture. Unlike roasting in a high-temperature oven, where the skin crisps up beautifully, slow cooking traps moisture and heat, resulting in turkey skin that will remain soft rather than crispy. The steam-rich environment of the slow cooker does not allow the skin to dry out and become crisp.

If you desire crispy skin, a simple trick is to finish the cooked turkey breast under a broiler for a few minutes after it’s removed from the slow cooker. Once the turkey has reached its internal temperature and rested, transfer it to a baking sheet and broil for 3-5 minutes, watching it carefully to prevent burning. This quick step can add that desirable golden-brown, crispy texture to the skin, offering the best of both slow-cooked tenderness and oven-roasted crispness.

How to Slow Cook a Turkey Breast to Perfection

Ingredients for Slow Cooker Turkey Breast Rub

Ingredients for Your Juicy Slow Cooker Turkey Breast

  • 1 (5-6 pound) turkey breast, bone-in (completely thawed)
  • 1 medium onion, chopped
  • 3-4 stalks celery, chopped
  • 1 cup turkey broth or chicken broth

For the Flavorful Rub:

  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped finely (or 1 teaspoon dried rosemary)
  • 2 teaspoons fresh sage, chopped finely (or 1 teaspoon dried sage)
  • 2 teaspoons fresh thyme, chopped finely (or 1 teaspoon dried thyme)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Can you cook a turkey breast from frozen in a slow cooker?

While technically some methods exist for cooking certain foods from frozen in a slow cooker, I strongly advise against attempting this with a turkey breast. Cooking a large piece of meat like a turkey breast from a frozen state in a slow cooker poses significant food safety risks and will yield a subpar culinary result.

When cooking a frozen turkey breast slowly, the meat spends an extended period in the “danger zone” (temperatures between 40°F and 140°F), where harmful bacteria can multiply rapidly. This can make you and your guests quite ill. Additionally, starting with a frozen turkey breast will drastically increase the cooking time, potentially leading to unevenly cooked meat—a dry, tough exterior with an undercooked or unsafe interior. For the best and safest outcome, always use a fresh or completely thawed turkey breast for this recipe. Your patience in thawing will be rewarded with a deliciously moist and safely prepared holiday meal.

Preparing Your Boneless or Bone-In Turkey Breast

How to Make Slow Cooker Turkey Breast Step by Step

Step-by-Step Guide: How to Make Slow Cooker Turkey Breast

Follow these simple steps to ensure your slow cooker turkey breast is perfectly cooked and packed with flavor:

  1. **Prepare the Turkey:** Carefully remove the turkey breast from its packaging. Rinse it thoroughly under cool running water, pat it completely dry with paper towels to ensure the rub adheres properly. Place the turkey on a clean plastic cutting board or a large baking sheet for easy handling.
  2. **Layer the Aromatics:** Take your chopped onion and celery and evenly distribute them at the bottom of your 6-quart (or larger) slow cooker. These vegetables will not only infuse flavor into the turkey and broth but also act as a natural rack, lifting the turkey slightly to prevent it from sitting directly on the bottom.
  3. **Create the Herb Rub:** In a small bowl, combine the olive oil with the finely chopped fresh rosemary, sage, and thyme (or their dried counterparts), along with salt and black pepper. Mix these ingredients thoroughly to form a fragrant paste.
  4. **Season the Turkey:** Generously coat the entire surface of the turkey breast with the olive oil mixture. Ensure an even application, pressing the herbs and spices into the skin and meat. This rub forms a flavorful crust that will seep into the turkey as it cooks.
  5. **Position in Slow Cooker:** Gently place the seasoned turkey breast on top of the bed of onions and celery in your slow cooker.
  6. **Add the Broth:** Carefully pour the turkey or chicken broth into the slow cooker, around the sides of the turkey, rather than directly over the top. This prevents washing away the aromatic seasoning rub you just applied. The broth will create a moist environment and contribute to a rich cooking liquid.
  7. **Slow Cook to Perfection:** Cover the slow cooker with its lid and cook on the LOW setting for 5-6 hours. The cooking time can vary slightly depending on the size of your turkey breast and your slow cooker’s efficiency. Begin checking the internal temperature at the 5-hour mark. The turkey is done when the internal temperature, measured with a meat thermometer inserted into the thickest part of the breast (without touching the bone), reaches 165 degrees Fahrenheit (74 degrees Celsius).
  8. **Rest Before Carving:** Once cooked, carefully remove the turkey breast from the slow cooker and transfer it to a clean cutting board. Tent it loosely with foil and allow it to rest for 15-20 minutes. This crucial resting period allows the juices to redistribute throughout the meat, resulting in a more tender and moist turkey.
  9. **Carve and Serve:** After resting, carve the turkey breast into slices against the grain. Serve immediately with your favorite holiday sides.
  10. **Store Leftovers:** Promptly refrigerate any leftover turkey in an airtight container for up to 3-4 days, or cut it into smaller portions and freeze for up to 2 months for future meals.

Don’t let any delicious turkey go to waste! Leftovers are an excellent opportunity to create new, comforting meals. Here are some fantastic ideas to transform your slow cooker turkey breast:

  • Turkey Chili: This robust and flavorful chili is a fantastic way to utilize leftover turkey. Dice or shred the turkey and stir it into your go-to chili recipe for an added protein boost and depth of flavor.
  • Turkey Enchiladas: Add a Tex-Mex twist to your leftovers! Shred the turkey and use it as a flavorful filling in your favorite enchilada recipe, paired with a vibrant green or red sauce and plenty of cheese.
  • Turkey Soup: A warm and soothing soup is ideal for cold weather. Combine chopped or shredded leftover turkey with vegetables, broth, and perhaps some noodles or rice for a satisfying and easy meal.
  • **Turkey Sandwiches or Wraps:** The simplest and quickest way to enjoy leftovers. Layer sliced turkey with your favorite bread, cheese, lettuce, tomato, and a dollop of cranberry sauce or mayo.

How Long Do You Cook Turkey Breast in a Slow Cooker?

The cooking time for turkey breast in a slow cooker can vary depending on its size, whether it’s bone-in or boneless, and the specific model of your slow cooker. Always use a meat thermometer to ensure accuracy, but here’s a general guideline for cooking times on the LOW setting:

  • **2 lb turkey breast:** 2 hours 30 minutes to 3 hours 30 minutes
  • **3 lb turkey breast:** 3 hours 30 minutes to 4 hours 30 minutes
  • **4 lb turkey breast:** 4 hours 30 minutes to 5 hours 30 minutes
  • **5-6 lb turkey breast:** 5 hours 30 minutes to 6 hours 30 minutes

PRO TIP: For those who love a crispy skin on their turkey, even after slow cooking, simply transfer the cooked turkey breast to a baking sheet and place it under a broiler for about 3-5 minutes. Watch it closely to achieve a beautiful golden-brown crispness without burning. This step is completely optional but adds a delightful texture contrast.

Your Perfect Slow Cooker Turkey Breast Recipe

Adding seasoning to the turkey breast

Important Poultry Prep Safety – Please Read!

It is crucial to prioritize food safety, especially when handling raw poultry. While some sources advise against rinsing poultry due to the risk of spreading microbes, for a turkey breast removed from packaging, a quick rinse to remove excess juices can be beneficial. However, the most critical step is ensuring thorough disinfection of your kitchen area afterward.

After rinsing your turkey, immediately disinfect your sink and all surrounding countertops and surfaces where any poultry juices may have splashed. Use a sanitizing wipe or an antibacterial spray and allow it to sit for the recommended contact time to effectively kill bacteria. Remember, proper cooking to 165°F will eliminate any microbes on the turkey itself, but preventing cross-contamination in your kitchen is essential for guest safety. Always wash your hands thoroughly with soap and warm water for at least 20 seconds after handling raw turkey.

Can leftover turkey breast be frozen?

Absolutely! Freezing leftover turkey is an excellent way to extend its shelf life and ensure you have ready-to-use protein for future meals. We typically enjoy our leftovers in the refrigerator for the first couple of days. However, if it looks like we won’t consume all the turkey within 3-4 days of cooking, I portion it out into airtight containers or zip-top freezer bags and freeze it. Properly stored, frozen turkey breast can maintain its quality for up to 2 months.

It’s incredibly convenient to have frozen turkey on hand for last-minute dinners, especially for quick soups or casseroles. The best part? You often don’t even need to thaw it first for many recipes, like adding it directly to a simmering soup in an Instant Pot or on the stovetop. This makes meal prep a breeze and helps reduce food waste.

Why is it important to use a meat thermometer on the thickest part of the bird?

Using a meat thermometer correctly is the single most important step in ensuring your turkey is safely cooked and perfectly tender. The key to accurate temperature reading is to insert the thermometer into the thickest part of the meat, as this is the last area to reach the target internal temperature.

When using a digital thermometer, carefully insert the probe into the deepest section of the turkey breast, avoiding any bones or pockets of fat. Bones conduct heat differently, and touching them can give you an artificially high or inaccurate reading. Similarly, fat pockets may not reflect the true temperature of the lean meat. Insert the probe slowly and ensure the tip is centered in the densest part of the meat. A correct reading will confirm that the entire turkey breast has reached the safe internal temperature of 165°F (74°C), guaranteeing a delicious and safe meal for everyone.

Bone-In or Boneless Turkey Breast: Which to Choose?

When selecting your turkey breast for slow cooking, you have the option of choosing either a boneless or bone-in variety. Both will work wonderfully with this recipe, but there are a few considerations that might influence your choice.

A **bone-in turkey breast** typically offers more flavor due to the bone itself, which releases juices and compounds during cooking that enrich the broth and the meat. It also tends to stay moister because the bone acts as a natural insulator. However, it will generally take slightly longer to cook than a boneless breast of the same weight, and carving around the bone requires a bit more care. A bone-in breast is often a great choice for a richer, more traditional flavor profile.

A **boneless turkey breast**, on the other hand, cooks more quickly and evenly. It’s also much easier to carve once cooked, making it a convenient option for quick serving. While it might be perceived as slightly less flavorful than its bone-in counterpart by some, proper seasoning and the slow cooker method ensure it remains incredibly moist and delicious. Your choice ultimately depends on your preference for cooking time, ease of carving, and desired depth of flavor.

How To Carve A Turkey Breast Effortlessly

Carving a perfectly cooked turkey breast doesn’t have to be intimidating. Follow these simple steps for neat, even slices:

  • **Position the Breast:** After the turkey breast has rested, place it on a clean cutting board. If it’s a whole breast, you’ll often have two lobes connected by a breastbone.
  • **Slice Down the Middle:** Using a sharp carving knife, make a cut straight down along one side of the breastbone, separating one lobe from the bone. Repeat this on the other side.
  • **Slice Against the Grain:** Once separated from the bone, lay each breast lobe flat on the cutting board. Now, slice across the grain of the meat into even, desired thickness. Slicing against the grain ensures that each piece is tender and easy to chew.
  • **Arrange and Serve:** Arrange your beautifully carved turkey slices on a platter, ready to serve and impress your guests.

Pin Recipe

Prep Time: 10 mins

Cook Time: 6 hrs

Total Time: 6 hrs 10 mins

Ingredients

  • 1 (5-6 pound) turkey breast, bone-in, completely thawed
  • 1 medium onion, chopped
  • 3-4 stalks celery, chopped
  • 1 cup turkey broth or chicken broth

Rub

  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped finely or 1 teaspoon dried rosemary
  • 2 teaspoons fresh sage, chopped finely or 1 teaspoon dried sage
  • 2 teaspoons fresh thyme, chopped finely or 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Remove the packaging and rinse the turkey breast under cool water, pat dry with paper towels. Place the turkey on a plastic cutting board or on a large baking sheet.
  2. Cut onion and celery and place them in the bottom of a 6-quart slow cooker.
  3. In a small bowl, combine the ingredients for the rub.
  4. Coat the turkey with the oil and then add seasoning rub.
  5. Place the turkey on top of the vegetables in the slow cooker.
  6. Pour the broth into the cooker, on the sides of the turkey – not on top so that you don’t wash away the seasonings you just added.
  7. Cover and cook on low for 5-6 hours or until internal temperature reaches 165 degrees F, check the temperature at the 5-hour mark.
  8. Remove the turkey from the cooker and let it rest for 15-20 minutes before slicing.
  9. Carve and serve.
  10. Store any leftovers in the refrigerator or cut it up and freeze it for another recipe later on.

Notes

**Note – Poultry Prep Safety:** PLEASE BE SURE TO DISINFECT YOUR SINK AND THE SURROUNDING COUNTERTOPS AFTER RINSING THE TURKEY. While I don’t typically recommend rinsing poultry because it just spreads any microbes around your kitchen – when it comes to turkey, you need to at least rinse off the extra juices in the packaging. Don’t worry – all the microbes will cook out – but the sink and any areas where things could have splashed will need to be properly disinfected. Use a wipe or spray and be sure to leave it on for the recommended time so you aren’t spreading things around your kitchen.
