There’s something incredibly satisfying about cooking filet mignon at home. Not only does it yield an unbelievably delicious meal, but it’s also remarkably straightforward to execute. If you’re searching for a dish that comes together in under 30 minutes and guarantees to make everyone swoon with delight, this is it. Our journey to creating this masterpiece began with a fortunate find at Costco: a substantial beef loin. My husband, ever the opportunistic shopper, picked it up without a second thought to the price. Upon reviewing the receipt, my heart nearly stopped – a $100 cut of meat! Initially, I insisted he return it, questioning why we, of all people, needed such an extravagant item. However, after some quick research, we discovered that this was no ordinary cut. It was, in essence, a giant piece of filet mignon before being portioned into individual medallions, and purchasing it at Costco, even at that price, was an exceptional deal. We had the option to cook it as a whole tenderloin or slice it into approximately ten individual filet medallions. Opting for the latter, we embarked on creating this truly amazing dish.

Crafting Your Perfect Spinach Mushroom Filet Mignon
Creating this impressive meal is much easier than you might imagine. The key lies in understanding a few fundamental principles of cooking filet mignon and building layers of flavor in your sauce. For the filet, starting with high-quality beef is paramount. Allowing the meat to come to room temperature before searing ensures even cooking and a beautiful crust. A cast iron skillet is your best friend here, as it retains heat exceptionally well, leading to that perfect sear. Don’t be afraid to season generously; salt and pepper are crucial for enhancing the natural flavors of the beef. When searing, resist the urge to move the meat. Let it sit undisturbed for a few minutes on each side to develop that delicious, caramelized crust that adds depth and texture.
The creamy white wine sauce is where this dish truly distinguishes itself. It’s a surprisingly simple concoction that elevates the entire meal. By simmering mushrooms, fresh spinach, garlic, and white wine with a touch of butter and half & half, you create a velvety, aromatic sauce that perfectly complements the rich beef. The white wine adds a subtle tang and complexity, balancing the richness of the cream and the meat. Choose a dry white wine, like Sauvignon Blanc or Pinot Grigio, for the best results, as it will lend acidity without sweetness. The spinach will wilt down beautifully, adding a touch of freshness and vibrant color to the sauce, while the mushrooms provide an earthy counterpoint to the beef.

Spinach Mushroom Filet Mignon in Creamy White Wine Sauce
Ingredients
Sauce
- 1/2 cup sliced mushrooms
- 1/2 cup loosely packed fresh spinach
- 2 tbsp butter
- 3/4 cups half & half
- 2 tsp minced garlic
- 1/4 cup white wine
Filet
- 1 beef loin- sliced into 1″ thick medallions
- 2-3 tbsp Worcestershire sauce
- seasonings – salt pepper, granulated garlic
- 4-6 tsp Italian Garlic Butter
Instructions
-
Take your meat out of the refrigerator & let sit for at least 30 minutes to come to room temperature. This ensures even cooking.
-
Preheat oven to 450 degrees F (232 C).
Prepare the Creamy White Wine Sauce
-
In a medium saucepan, combine butter, sliced mushrooms, fresh spinach, minced garlic, half & half, and white wine.
-
Heat over medium heat, bringing the mixture to a gentle boil. Continue to cook for approximately 10 minutes, or until the mushrooms are tender and the sauce has slightly thickened. Set aside.
Cook the Filet Mignon
-
Unwrap the beef loin medallions and pat them thoroughly dry with paper towels. Dry meat ensures a better sear and a crisp crust.
-
Place the medallions in a well-seasoned cast iron skillet. Arrange them close together but ensure they are not touching, allowing proper searing on all sides.
-
Drizzle the Worcestershire sauce over the filets, then season generously with salt, pepper, and granulated garlic. (Parsley will be added later if desired).
-
Cook on each side for approximately 3-4 minutes over medium-high heat. It’s crucial to place the meat down and leave it undisturbed to allow a beautiful crust to form. Do not move or flip frequently.
-
Once the meat has browned on all sides, generously drizzle the prepared creamy white wine sauce over the top of the filets. Immediately transfer the skillet to the preheated oven and cook for an additional 7-8 minutes. This will finish cooking the filets to your desired doneness (medium-rare to medium is usually ideal for filet mignon) and allow the flavors to meld beautifully.
-
Remove the skillet from the oven and immediately add pats of Italian Garlic Butter over each filet. The residual heat will melt the butter, infusing the meat with even more flavor.
-
Let the filets rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful steak. Enjoy your gourmet creation!

Tips for Success and Serving Suggestions:
To ensure your Spinach Mushroom Filet Mignon turns out perfectly every time, consider these additional tips. Always use fresh, high-quality ingredients, especially for the beef and fresh produce like spinach and mushrooms. For an extra layer of flavor, consider using homemade Italian garlic butter, or even infusing your own olive oil with garlic and herbs. The choice of white wine is also crucial; a dry, crisp white wine will yield the best flavor profile for the sauce, preventing it from becoming overly sweet.
This elegant dish pairs beautifully with a variety of sides. Consider serving it alongside roasted asparagus, garlic mashed potatoes, creamy polenta, or a simple green salad with a light vinaigrette. For a truly cohesive meal, the same dry white wine used in the sauce would be an excellent choice for a beverage pairing. The acidity of the wine will cut through the richness of the steak and cream sauce, enhancing the overall dining experience. Don’t forget a crusty baguette to sop up every last drop of that incredible sauce!
