The Story Behind My Favorite Roasted Potatoes

As with many of my cherished family dinner ideas, this particular recipe holds a special place in my heart due to a wonderful memory. It’s a story I don’t always share, but this one feels particularly significant to me.

Years ago, right after high school, my then-boyfriend (who later became my first husband) and I embarked on a trip to Oregon so I could meet his extended family. Among their many traditions, one stood out: a visit to a beloved pizza place called Abby’s. If you’re from Oregon, you likely know exactly the delightful experience I’m describing.

Beyond their famous pizza, Abby’s served something truly extraordinary: perfectly roasted, incredibly crispy potato rounds. I honestly don’t know if I had simply never encountered anything quite like them before, or if it was their unique method of preparation that made them so exceptional. But I was utterly captivated from the first bite!

I was HOOKED! Every single time we visited Oregon thereafter, a stop at Abby’s for those potatoes was non-negotiable. Years later, when my husband and I traveled through the state, I insisted we make a detour so I could share this long-held obsession with him. The taste of those potatoes had become a treasured memory, a flavor I would always swoon over.

Recreating the Perfect Roasted Potatoes at Home

Since frequent trips to Oregon are no longer a part of my routine, I knew I had to master making these beloved roasted potatoes at home. It became a mission to capture that same unforgettable flavor and texture.

My homemade version takes inspiration from that nostalgic memory, but I’ve added my own special touch: a generous sprinkle of parmesan cheese, fresh parsley, and chives right at the end. This simple addition elevates them to a whole new level of “YUM!” They are truly over-the-top DELICIOUS, and I am confident you will fall in love with them just as much as I have.

Commonly Asked Questions for Crispy Roasted Potatoes

Why do I need to soak the potatoes first?

Soaking the potatoes is a crucial step for achieving that coveted crispiness. It helps to leach out excess starch from the potato slices. This not only prevents them from sticking together during baking but also contributes significantly to their ability to crisp up beautifully. Additionally, soaking helps prevent the potatoes from browning too quickly or unevenly during the mixing and baking process, ensuring an even, golden finish.

How many servings does this recipe yield?

This recipe is designed to serve approximately 6 individuals, depending on portion sizes and appetites! In my house, with five adult appetites, this quantity is usually perfect for a game-day snack or a substantial side dish. If you’re feeding a larger crowd or expect particularly hearty eaters, I highly recommend doubling the recipe to ensure everyone gets enough of these delightful roasted potato slices.

Can this Parmesan Roasted Potatoes recipe be doubled?

Absolutely, and we frequently do! Doubling the recipe is a fantastic idea, especially for gatherings or if you want leftovers (though they rarely last long!). You might need to use two or even three baking sheets to ensure the potatoes are spread in a single layer. This is vital for achieving optimal crispiness. Trust me, it’s worth the extra sheet pan space; these delicious roasted potato slices are truly that good!

How To Make Crispy Parmesan Roasted Potatoes

Making these irresistible parmesan roasted potatoes is incredibly straightforward. Follow these simple steps for perfectly crispy and flavorful results:

  1. **Prepare the Potatoes:** Begin by washing the russet potatoes thoroughly. Slice them into thin, round pieces – a mandoline slicer can be very helpful here for even thickness. Place all the sliced potatoes in a large bowl.
  2. **Soak for Crispiness:** Fill the bowl with enough cold water to completely cover the potato slices. Add about 2 cups of ice to the water and let the potatoes soak for approximately 30 minutes. This step is key to removing excess starch, which helps achieve that desirable crispy texture.
  3. **Dry Thoroughly:** After soaking, drain the water from the bowl. It’s crucial to pat the potato slices completely dry with paper towels. Any remaining moisture will prevent them from crisping up in the oven.
  4. **Preheat Oven:** While the potatoes are drying, preheat your oven to 450 degrees Fahrenheit (230°C).
  5. **Season the Potatoes:** Place the dried potato slices into a large zip-top bag. Add the garlic powder, smoked paprika, kosher salt, and black pepper. Seal the bag and shake vigorously to ensure all the potatoes are evenly coated with the seasonings.
  6. **Add Olive Oil:** Pour the olive oil into the bag with the seasoned potatoes. Seal the bag again and shake well until every potato slice is thoroughly coated in oil.
  7. **Arrange on Baking Sheet:** Remove the potatoes from the bag and arrange them in a single layer on a parchment-lined baking sheet. It’s important not to overcrowd the pan; you may need to use more than one baking sheet to ensure proper air circulation and crisping.
  8. **Bake to Perfection:** Bake for 35-40 minutes, or until the potatoes are cooked through, beautifully golden brown, and wonderfully crispy on the outside.
  9. **Parmesan Finish:** Once baked, immediately transfer the hot potatoes to a large clean bowl. Add both the shredded and grated parmesan cheeses, along with the chopped fresh parsley and chives. Toss everything together until the potatoes are evenly coated with the cheesy herb mixture.
  10. **Serve Hot:** Serve these delightful Parmesan Roasted Potatoes immediately with your favorite dipping sauce, such as ranch dressing or ketchup, while they are still warm and crispy.

What is the Best Way to Store Leftover Roasted Potatoes?

If you happen to have any leftover Parmesan Roasted Potatoes (a rare occurrence!), store them properly to maintain their flavor. Place any cooled leftovers in an airtight container and refrigerate for up to 3 days. To reheat and bring back some of their crispiness, spread them on a baking sheet and warm them in a preheated oven at 375°F (190°C) for about 10-15 minutes, or until heated through and crisp again. An air fryer also works wonders for reheating!

Ingredients for Your Best Roasted Potatoes

To create these incredibly delicious Parmesan Roasted Potatoes, you’ll need a few key ingredients. Each one plays a role in building the fantastic flavor and texture:

  • Russet Potatoes: These are ideal for roasting due to their high starch content, which helps achieve that desirable fluffy interior and crispy exterior.
  • Ice: Used in the soaking process to help draw out excess starch from the potatoes, ensuring maximum crispiness.
  • Garlic Powder: Provides a foundational savory and aromatic flavor that permeates every potato slice.
  • Smoked Paprika: Adds a beautiful color and a subtle smoky depth that enhances the overall taste.
  • Kosher Salt: Essential for seasoning, bringing out the natural flavors of the potatoes and spices.
  • Black Pepper: A classic seasoning that adds a hint of mild spice.
  • Olive Oil: Coats the potatoes evenly, facilitating browning and crispiness during roasting.
  • Shredded Parmesan Cheese: Melts beautifully, creating a savory, slightly crispy crust on the potatoes.
  • Grated Parmesan Cheese: Offers a finer texture and intense burst of cheesy flavor when tossed with the hot potatoes.
  • Chopped Parsley: Fresh herbs add a vibrant color and a fresh, herbaceous note.
  • Chopped Chives: Similar to parsley, chives provide a delicate oniony flavor and a touch of freshness.
