Frequently Asked Questions About Blueberry Hand Pies
Whether you’re new to making hand pies or a seasoned baker, you might have a few questions about this delightful dessert. Here are some commonly asked questions to help you master your blueberry hand pies and ensure they turn out perfectly every time.
What Exactly is a Hand Pie?
A hand pie is a delightful type of turnover, cleverly designed to be a single-serving portion of pie that’s easy to hold and eat. It’s typically crafted from a sweet and savory pie crust or a tender biscuit dough, then generously filled with a variety of ingredients, most commonly fruit, but sometimes meat or other savory fillings. These portable pastries can be either baked to a golden perfection or fried until crispy, making them incredibly versatile for different tastes and occasions. Their small size is a key characteristic, ensuring they are perfectly suited for being held in one hand, much like a savory pastry or a sweet turnover.
The origins of hand pies are deeply rooted in the culinary traditions of the British Isles, where they were a practical and delicious way to enjoy a full meal or dessert on the go. Over centuries, their popularity spread across the globe, evolving into countless regional variations, each with its unique twist on crust and filling. Today, hand pies remain a beloved treat worldwide, cherished for their convenience, comforting flavor, and charming individual presentation.
What’s the Difference Between a Hand Pie and a Turnover?
While often used interchangeably, there are subtle distinctions between a hand pie and a turnover, primarily concerning the dough and typical size. A turnover, though similar in concept, usually features a dough that’s lighter and more akin to a biscuit or puff pastry, providing a softer, often more airy texture. Turnovers also tend to be larger, designed to be a more substantial pastry, perhaps cut into portions or enjoyed as a generous individual serving. Hand pies, on the other hand, almost always use a traditional, richer, and flakier pie crust, which gives them a distinct snap and buttery depth. They are intentionally smaller, focusing on that “handheld” convenience, making them ideal for picnics, lunchboxes, or a quick dessert.
Can These Blueberry Hand Pies Be Made in an Air Fryer?
Absolutely! The air fryer is a fantastic tool for making these blueberry hand pies, offering a quicker and often crispier result. To prepare them in your air fryer, simply place the filled pies in the air fryer basket in a single layer, ensuring they aren’t overcrowded to allow for even cooking. Cook them at 375°F (190°C) until they achieve a beautiful golden brown color and the filling is bubbly, which typically takes about 5 to 8 minutes. Cooking times can vary slightly depending on your air fryer model, so keep an eye on them. You may need to work in batches if your air fryer basket isn’t large enough to accommodate all the hand pies at once. Repeat the process with any remaining hand pies until all are perfectly cooked. The air fryer yields a wonderfully crisp crust with a tender, juicy blueberry interior, making for an incredibly satisfying treat.

Creative Filling Ideas for Hand Pies
While blueberries are undeniably delicious, the beauty of hand pies lies in their adaptability to various fillings. Beyond the classic blueberry, there’s a whole world of flavors to explore. For other delightful fruit fillings, consider seasonal favorites like crisp apples (try cinnamon-spiced apple or apple-caramel), tart cherries, sweet peaches (especially wonderful with a hint of ginger), or mixed berries like raspberries and blackberries. You can also venture into tropical flavors with mango or pineapple fillings, perhaps with a touch of lime for brightness. The possibilities are truly endless!
For those who prefer a savory twist, hand pies can be just as satisfying. Popular savory fillings include seasoned ground meat (beef, pork, or chicken), a blend of rich cheeses (cheddar, Gruyere, feta), or a medley of roasted vegetables (spinach and ricotta, mushroom and onion, potato and leek). Breakfast hand pies are also a fantastic option, filled with scrambled eggs, bacon, and cheese for a portable morning meal. Just remember to adjust seasonings and ensure savory fillings are cooked through before baking inside the crust.
Can I Use Canned Pie Filling for Hand Pies?
Yes, you can certainly use canned pie filling to save time, but there are a few important considerations to keep in mind for the best results. Canned pie fillings often have a significant amount of liquid as their base, which can lead to soggy crusts or messy leaks if overfilled. To prevent this, you might want to slightly reduce the amount of filling you add to each hand pie compared to what you’d use with a homemade filling. If the canned filling appears particularly thin, you could gently simmer it in a saucepan for a few minutes to reduce some of the excess liquid, or stir in an additional half teaspoon of cornstarch (mixed with a tablespoon of cold water) per can to thicken it slightly before using. Over-filling with a liquid-heavy canned filling is the quickest way to end up with a huge, bubbly mess on your baking sheet, so err on the side of caution! Alternatively, you can always use my delicious homemade blueberry pie filling for a superior flavor and texture.
Make-Ahead and Freezing Instructions for Hand Pies
One of the many great features of these easy hand pies is their make-ahead potential. You can prepare them in advance and freeze them for later enjoyment, making entertaining or meal prepping a breeze!
For Unbaked Hand Pies: Prepare the hand pies up to the point where they are assembled and ready to bake, but before applying the egg wash. Arrange them on a baking sheet lined with parchment paper, ensuring they don’t touch. Place the baking sheet in the freezer until the hand pies are completely solid, usually a couple of hours. Once frozen, transfer them to an airtight container or a heavy-duty freezer bag, layering them with parchment paper if necessary, to prevent them from sticking together. They can be stored in the freezer for up to 3 months. When you’re ready to bake, there’s no need to thaw them! Simply place the frozen hand pies on a parchment-lined baking sheet, apply the egg wash, and bake as directed, adding an extra 5-10 minutes to the bake time, or until golden brown and bubbly.
For Baked Hand Pies: Allow the baked hand pies to cool completely on a wire rack. Once cooled, transfer them to an airtight container or freezer bag. For best quality, consume within 1-2 months. When you’re ready to enjoy them, allow them to thaw at room temperature for an hour or two. If you prefer them warm, you can reheat them in a preheated oven at 300°F (150°C) for about 10-15 minutes, or gently warm them in the microwave for a quicker option. Be aware that the texture of a freshly baked pie may be slightly different than one that has been frozen and defrosted, with the crust potentially being a bit softer.

Ingredients for Irresistible Blueberry Hand Pies
Creating these delightful blueberry hand pies requires a simple list of ingredients, many of which you likely already have on hand. The combination of fresh, sweet blueberries with a hint of lemon and a perfectly flaky crust is what makes this recipe truly special.
- Refrigerated pie crusts or homemade pie dough: For convenience, pre-made crusts are fantastic. If you have time, a homemade crust elevates the flavor and texture significantly.
- Fresh blueberries: The star of the show! Choose plump, firm berries for the best flavor. Frozen blueberries can also be used; just be sure to thaw and drain them well to avoid excess moisture.
- Granulated sugar: To sweeten the berries and balance their natural tartness.
- Lemon juice: A splash of fresh lemon juice brightens the blueberry flavor and prevents the filling from being overly sweet.
- Cornstarch: Acts as a thickening agent for the blueberry filling, ensuring it’s juicy but not runny, preventing leaks during baking.
- Lemon zest: Finely grated lemon zest adds a wonderful aromatic lift and enhances the overall citrus notes, complementing the blueberries beautifully.
- Egg: Used in the egg wash to create a golden, glossy finish on the crust.
- Milk: Mixed with the egg for the egg wash, helping to create that perfect sheen.
Pro Tip: For an extra touch of sparkle and a delightful crunch, coarse sugar can be lightly sprinkled over the top of the crusts just before baking!
Refrigerated vs. Homemade Pie Crust: Which is Best for Hand Pies?
The choice between refrigerated and homemade pie crust largely depends on your time, skill level, and desired outcome. For this easy hand pie recipe, I often use refrigerated pie crusts, and it’s a fantastic shortcut that proves just how simple it is to whip these together with minimal effort and a handful of ingredients. The convenience of pre-made crusts means less time spent on preparation and more time enjoying the baking process.
However, if you’re looking to truly elevate your hand pies and achieve an unmatched depth of flavor and texture, I highly recommend using my famous never-fail homemade pie crust. There’s something undeniably special about the rich, buttery flakiness of a crust made from scratch. Homemade dough allows for greater control over ingredients and texture, often resulting in an even more tender and crisp pastry that turns out absolutely AMAZING every single time. Whichever you choose, both options will yield delicious blueberry hand pies, so pick what suits your baking style best!

Step-by-Step Guide: How to Make Blueberry Hand Pies
Ready to create these delightful individual blueberry pies? Follow these simple instructions to bake a batch of warm, fruity, and perfectly flaky hand pies that everyone will adore!
- Prepare Your Oven: Preheat your oven to a precise 400°F (200°C). This ensures the crust bakes quickly and evenly, achieving that perfect golden-brown color.
- Line Baking Sheet: Line a large baking sheet with parchment paper. This prevents sticking and makes for easy cleanup. Set it aside.
- Roll Out the Dough: Lightly flour a clean, smooth, flat work surface. Carefully unroll your refrigerated pie crusts. If you’re using homemade dough, roll it out to about 1/8-inch thickness.
- Cut Circles: Using a lightly floured 2-inch round cookie cutter (or a drinking glass rim), cut out as many circles as possible from the dough. You should typically get about 8 circles per standard pie crust. Gather any scraps, re-roll, and cut more circles until all dough is used.
- Prepare Blueberry Filling: In a small bowl, combine the fresh blueberries, granulated sugar, fresh lemon juice, cornstarch, and lemon zest. Stir gently until the blueberries are evenly coated. The cornstarch will help thicken the juices as they bake.
- Fill Half the Circles: Spoon a small amount of the blueberry mixture into the center of half of your cutout dough circles. Be sure to leave a clear ¼-inch border around the edges of each circle – this space is crucial for sealing the pies.
- Make Egg Wash: In another small bowl, whisk together the egg and milk until they are well combined and smooth. This creates your egg wash, which will give the pies a beautiful golden finish.
- Assemble Pies: Lightly brush the edges of the filled dough circles with the prepared egg wash. Carefully place the remaining (unfilled) dough rounds on top of the filled halves, aligning the edges.
- Seal and Vent: Use the tines of a fork to crimp and seal the edges of all the pies, ensuring the filling is securely enclosed. Then, using a small sharp knife, cut a few small slits in the middle of the top crust of each pie. This allows steam to escape during baking, preventing the pies from bursting.
- Egg Wash Top: Brush the top of each assembled hand pie with the remaining egg wash. If desired, sprinkle a little coarse sugar over the top for extra sparkle and crunch.
- Bake to Perfection: Carefully place the prepared hand pies onto your parchment-lined baking sheet. Transfer to the preheated oven and bake for about 15-18 minutes, or until the crusts are beautifully golden brown and the filling is visibly bubbly.
- Cool and Enjoy: Remove the pies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool slightly. Enjoy them while warm for the best experience!
- Storage: Store any leftover baked hand pies in an airtight container in the refrigerator for up to one week. They are delicious cold or gently reheated.
