  • cups all-purpose flour (the base for our tender bread)
  • ¼ cup butter – melted (adds richness and moisture)
  • 2 tsp molasses (contributes to the bread’s distinctive dark color and deep, earthy sweetness)
  • 1 tsp salt (balances the flavors and controls yeast activity)
  • ¾ cup honey (provides sweetness and helps with browning and moisture retention)
  • 1 tbsp cocoa (enhances the dark color and adds a subtle chocolatey depth)
  • 1 pkt Starbucks House Blend instant coffee (a secret ingredient for rich flavor and deeper color, without making it taste like coffee)
  • Oats to sprinkle (for a rustic finish and added texture)

Instructions

  • To prepare your slow cooker, line it thoroughly with parchment paper. This prevents sticking and makes removal effortless. Lightly spray the parchment paper with cooking spray for an extra layer of non-stick protection.
  • In the bowl of a stand mixer, combine the warm milk, granulated sugar, and rapid rise yeast. Stir gently and let this mixture sit for 5 minutes. This “proofing” step allows the yeast to activate, indicating it’s alive and ready to make your bread rise. After 5 minutes, you should see a foamy layer on top; then mix it briefly to combine.
  • Add about half of the all-purpose flour to the yeast mixture, along with the melted butter, rich molasses, and salt. Attach the dough hook to your mixer and mix on low speed until these ingredients are just combined.
  • Allow the dough to rest in the mixer bowl for 2 minutes. This brief rest helps the flour absorb the liquids, making the subsequent kneading much easier and more effective.
  • Now, add the remaining flour, sweet honey, cocoa powder, and the packet of instant coffee to the bowl. Mix again with the dough hook on low speed until all ingredients are thoroughly combined and start to form a cohesive dough.
  • Increase the mixer speed to medium-low and knead the dough with the dough hook for 4-5 minutes. If kneading by hand, this will take about 10 minutes. Continue until the dough is smooth, elastic, and pulls away from the sides of the bowl. It should feel springy to the touch.
  • Once kneaded, let the dough rest for another 5 minutes. This allows the gluten to relax, making it easier to shape the rolls.
  • Pull off small pieces of the dough, roughly equal in size, and shape them into individual rolls. Carefully arrange these rolls in a single layer at the bottom of your prepared slow cooker. If your slow cooker is smaller, it’s perfectly fine to double the layers; just ensure there’s enough room for them to rise slightly.
