Ingredients

This recipe yields approximately 3 cups of delicious, refreshing sorbet.

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice (from about 2-3 medium lemons, for bright tanginess)
  • 1 tbsp. fresh lemon zest (finely grated, for maximum aromatic lemon flavor)
  • 1 1/2 cup fresh, ripe diced strawberries (ensure they are sweet and flavorful for the best sorbet)
  • 1 tbsp. orange juice (enhances the strawberry flavor beautifully without overpowering it)

Instructions

  1. Start by combining your water and granulated sugar in a medium-sized saucepan. Place the saucepan over medium heat on your stovetop.
  2. Bring the mixture to a gentle simmer, stirring occasionally until the sugar completely dissolves. This step creates a simple syrup, which is crucial for achieving a smooth, crystal-free sorbet texture.
  3. Carefully pour your freshly made simple syrup into a clean bowl or glass container. A glass measuring cup is ideal for this, as it will make it easier to divide the syrup later. Chill the syrup thoroughly in the refrigerator until it is completely cold – this is essential for optimal sorbet consistency.
  4. In the meantime, while your syrup is chilling, prepare your strawberry puree. In a blender or food processor, combine the fresh diced strawberries with the orange juice. Blend until you achieve a perfectly smooth and uniform consistency.
  5. To ensure the silkiest homemade sorbet, strain the strawberry puree through a fine-mesh sieve into a separate bowl. This process removes any small seeds or excess pulp, resulting in a wonderfully smooth and refined base.
  6. Since we are crafting a beautiful swirled sorbet, you will need two separate freezer-safe containers for the initial freezing stage. Two 1-quart freezer-safe containers work perfectly for this purpose.
  7. In the first container, combine the fresh lemon juice, the aromatic lemon zest, and exactly half of your thoroughly chilled simple syrup (this should be approximately 3/4 cup). Stir these ingredients well to combine their bright, tangy flavors.
  8. In the second container, gently mix your smooth strawberry puree with the remaining half of the simple syrup. Ensure both mixtures are well incorporated.
  9. Cover both containers tightly and transfer them to the freezer for a minimum of 4 hours. This initial freeze will allow them to firm up but not completely solidify, preparing them for the next step.
  10. After 4 hours, remove both containers from the freezer. At this point, the mixtures will be firm but still somewhat pliable and scoopable.
  11. Blend each mixture separately until smooth and slightly lighter in color. You can achieve this using either a powerful blender or an electric hand mixer. The goal here is to break down any ice crystals that may have formed and to aerate the mixture, resulting in a delightfully creamier, no-churn sorbet texture.
  12. Now, for the beautiful swirling effect! Take a clean 1-quart freezer-safe container. Begin layering the lemon sorbet mixture and the strawberry sorbet mixture alternately, creating distinct strata of color and flavor.
  13. Once all layers are in, take a butter knife or a skewer and gently drag it through the layers in a graceful swirling motion. Be careful not to overmix, as you want to achieve distinct, eye-catching swirls rather than a fully blended, uniform color.
  14. Cover your swirled sorbet container tightly and return it to the freezer. Allow it to chill until it is completely firm. For the absolute best results, ideal scoopability, and maximum flavor integration, chilling it overnight is highly recommended.
  15. Serve your homemade Strawberry Lemon Sorbet immediately, and prepare to enjoy a truly refreshing burst of vibrant summer flavor!
