  • 1 box blue jello (3 ounces)
  • ¾ cup boiling water
  • 6 ounces coconut rum
  • 4 ounces pineapple juice
  • pineapple chunks (optional)
  • whipped cream (optional)
  • maraschino cherries (optional)

Instructions

  1. Add the jello powder to a medium mixing bowl and pour the hot water over the top of it. Stir until dissolved.
  2. Add the rum and juice. Stir to combine.
  3. Line the cups up on a solid, flat, and moveable surface like a cookie sheet.
  4. Using the injector or measuring cup, fill each cup about ¾ of the way full.
  5. Place the tray of filled cups in the fridge for 4 hours or until set up.
  6. Top with whipped cream, a cherry, and a chunk of pineapple if desired, and enjoy!

Notes

  • These jello shots won’t set up super solid like jello normally does. It will be a tad softer than that due to the alcohol. If you want it to be more solid, add 2 ounces of pineapple juice and take away 2 ounces of the rum.
  • These will last in the fridge for about two weeks as long as they are covered with their lids.
  • Do not freeze.
  • Do not add the toppings unless you’re going to be serving within the next hour or so. The whipped cream and such can get gross sitting out in the fridge with nothing covering them.
  • I use the injector because it leaves less of a mess and there’s less room for dripping and spilling. However, it’s not too shabby using a pourable measuring cup either.
  • It’s important that you make sure the jello is fully dissolved in the hot water before moving to the next step.
  • For a virgin or kid-safe jello shot, replace the coconut rum with coconut water.
