Irresistible Grilled Chicken Skewers: A Summer Essential

Chicken Skewers

One of the most cherished aspects of grilling, beyond the fantastic food, is the opportunity it creates for outdoor dining. We gather all our culinary creations, side dishes, and condiments, carrying them out to our picnic table. There, under the open sky, we enjoy some truly amazing food, pour a refreshing glass of wine, and simply feast. It’s a simple pleasure that transforms an ordinary meal into a memorable occasion.

For this particular grilling adventure, we chose to pair our chicken skewers with Santa Rita 120 Hero’s Reserve Red Blend and Santa Rita 120 Sauvignon Blanc from Chile. The choice was inspired by a fond memory: my partner recalls his parents always enjoying a glass of wine with whatever delicious fare they had grilled during the summer months. This tradition perfectly complements the relaxed, joyful atmosphere of a backyard barbecue.

Mastering BBQ Kebabs at Home

Creating the perfect grilled chicken skewers, also known as chicken kebabs, is easier than you might think. The key lies in simple seasoning, proper preparation, and careful grilling. We’ll walk you through everything you need to know to achieve tender, juicy, and incredibly flavorful chicken every time. These skewers are versatile enough to be served as a main dish or as an appetizer for any summer gathering.

Frequently Asked Questions About Chicken Skewers

Can this recipe be doubled or tripled for a crowd?

Absolutely! This grilled chicken skewer recipe is incredibly forgiving and scales up beautifully. If you’re hosting a large summer party or preparing for a big family gathering, feel free to double or even triple the ingredients. Just make sure you have enough skewers and grill space to accommodate the larger quantity. You might also need to cook in batches to ensure even cooking.

Grilled Chicken with wine

The flavor profile of these skewers is absolutely divine. Beyond our standard pantry seasonings, the addition of Badia Complete Seasoning truly elevates the chicken, infusing it with an incredibly rich and complex flavor. It’s a game-changer! These skewers are so sensational, we’re already planning to make them repeatedly throughout the entire summer season. They’re that good!

What type of chicken is best for skewers?

For the most tender and juicy results, we recommend using boneless, skinless chicken breasts or thighs. Chicken breasts are leaner and cook quickly, while chicken thighs offer a bit more fat, resulting in a richer, more succulent bite. Cut the chicken into uniform 1.5 to 2-inch pieces to ensure even cooking. This also helps prevent some pieces from drying out while others are still cooking.

Should I marinate the chicken?

While this recipe uses a dry seasoning rub, a marinade can also add fantastic flavor and tenderness. If you prefer to marinate, a simple blend of olive oil, lemon juice, garlic, and herbs (or your favorite BBQ sauce) works wonderfully. Marinate the chicken for at least 30 minutes, or up to 4 hours in the refrigerator for deeper flavor. Avoid over-marinating with acidic ingredients, as this can sometimes make the chicken mushy.

What kind of skewers should I use?

Metal skewers are highly recommended as they are reusable and conduct heat, helping the chicken cook from the inside out. If you’re using wooden or bamboo skewers, remember to soak them in water for at least 30 minutes before threading the chicken. This prevents them from burning on the grill. Metal skewers with flat blades are great as they prevent the chicken from spinning when you try to flip them.

How to Make Delicious Chicken Kabobs on the Grill

  1. **Prepare Your Grill:** Preheat your grill to a high heat, aiming for around 400 degrees Fahrenheit. A hot grill is essential for a good sear.
  2. **Prepare the Chicken:** Remove the chicken breasts from their packaging and pat them dry with paper towels. Slice the chicken into uniform thin strips, roughly 1.5 to 2 inches wide.
  3. **Thread the Skewers:** Take each chicken strip and fold it in an accordion-like pattern before threading it onto a metal skewer. This method helps the chicken cook evenly and creates a beautiful presentation. Place the threaded skewers on a clean baking sheet.
  4. **Season Generously:** In a small bowl, combine your chosen seasonings (Badia Complete Seasoning, granulated garlic, seasoned salt, and pepper). Sprinkle this mixture liberally over all sides of the chicken skewers, ensuring every piece is coated for maximum flavor.
  5. **Sear the Chicken:** Once your grill is hot and ready, carefully place the chicken skewers on the grates. Allow them to sear for approximately 60 seconds on each side. This quick sear creates a beautiful crust and locks in the juices.
  6. **Cook to Perfection:** After searing, reduce the grill heat to medium. Continue cooking the chicken, turning occasionally, until the juices run clear and the internal temperature reaches 165 degrees Fahrenheit. This typically takes about 5-7 minutes per side, depending on the thickness of your chicken.
  7. **Add Sauce (Optional):** If you wish to add a BBQ sauce or other glaze, you have two options: either brush it on after the chicken is fully cooked, or drizzle it over the skewers just before serving. Adding sauce too early can cause it to burn.

Serve these glorious skewers hot off the grill with your favorite sides for a truly unforgettable meal. Enjoy!

What is the best way to store leftover BBQ Kebabs?

To store any leftover grilled chicken kebabs, first, remove the chicken pieces from the skewers. Place the chicken in an airtight container and refrigerate it promptly. For optimal freshness and safety, consume the leftovers within 3 days. Reheat gently in a microwave or on a stovetop, or enjoy them cold in salads or sandwiches.

Why Choose Santa Rita 120 Wines for Your Grilling Feast?

Choosing the right wine can significantly enhance your dining experience, especially when it comes to grilled foods. For our chicken skewers, we explored two exceptional selections from Santa Rita’s 120 range, each offering unique characteristics that complement grilled chicken beautifully.

The **Santa Rita 120 Hero’s Reserve Red Blend** is a captivating wine with a deep, dark ruby-red color. On the nose, it features inviting aromas of ripe blueberry, luscious plum, and blackcurrant (Cassis) fruit. These fruit notes are beautifully intertwined with nuanced hints of spices, vanilla, coffee, and tobacco, acquired from its barrel-aging process. While we often reserve a red blend for heartier dishes, this one surprisingly shone through during dessert, offering a sweet attack and a well-structured evolution on the palate. Its good volume, depth, and fruity finish leave a delightfully refreshing mouthfeel, proving its versatility beyond just a savory pairing.

For those who prefer white wine, the **Santa Rita 120 Sauvignon Blanc** is an excellent choice. This wine delights with delicate nuances of crisp citrus fruit and sweet white peach. Its vibrant character is beautifully supported by zesty acidity and a smooth texture that elegantly lingers on the palate. Sauvignon Blanc is classically known to pair well with fish and seafood, but we discovered it works wonderfully with our grilled chicken skewers. The bright acidity cuts through the richness of the chicken, creating a balanced and refreshing combination that truly enhances the meal.
