Decadent Black Forest Cake recipe with whipped cream and fresh cherries

Black Forest Cake is about decadent dark chocolate cake layers with whipped cream filling and fresh cherries on top. An indulgent and surprisingly easy-to-make birthday cake.

Ingredients

Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ½ cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 1 cup hot water
  • 2 eggs
  • ½ cup oil
  • 2 tsp vanilla extract

Whipped Cream Frosting

  • 3 cups heavy cream
  • ¼ cup confectioner’s sugar

Decorate

  • 1 cup chocolate sprinkles or shavings
  • 2 cups cherries – fresh, pitted and halved
  • Additional whole cherries for topping

Instructions

Cake

  1. Preheat the oven to 350 degrees F (175 C).
  2. Line two 8-inch cake pans with parchment paper. Grease them with butter or shortening and then dust with a light layer of cocoa powder, tapping off the excess. Set aside.
  3. Combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt in a large bowl. Whisk slowly to combine.
  4. Add the buttermilk, hot water, eggs, oil, and vanilla extract. Slowly mix until combined. Scrape down the sides and bottom of the bowl and mix again at medium speed until thoroughly combined and smooth.
  5. Divide the batter evenly between the two prepared cake pans and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely on a wire rack before assembling, typically 1-2 hours.

Whipped Cream Frosting

  1. Combine the cold heavy cream and confectioner’s sugar in the bowl of a stand mixer.
  2. Whip at high speed until stiff peaks form.

Decorate and Assemble

  1. Carefully remove the cooled cake layers from their pans. Place the first cake layer on your serving plate.
  2. Spread a thin, even layer of whipped cream across the top of the first cake layer.
  3. Top with a single layer of halved cherries, gently pressing them into the cream, then add another thin layer of whipped cream to spread evenly to the edges.
  4. Carefully place the second cake layer on top of the cherry and cream filling.
  5. Add a smooth layer of the remaining whipped cream frosting over the entire top and sides of the cake.
  6. Transfer any remaining whipped cream to a piping bag fitted with a large star tip.
  7. Pipe decorative frosting swirls or dollops evenly around the edges of the cake. Place a whole cherry with a stem on top of each cream dollop to decorate.
  8. Add the remaining sliced cherries to the center of the top of the cake.
  9. Chill the assembled cake in the refrigerator for 2-4 hours to allow it to set and flavors to meld before slicing and serving.

Notes

Cake can be stored in an airtight container in the fridge for up to 3-4 days.
