Ingredients

Cake

  • 1-1/2 cups all-purpose flour
  • 1 tbsp cornmeal
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup SPLENDA® Naturals Stevia Sweetener (equivalent to 18 packets)
  • 6 tbsp butter, room temperature
  • 1/2 tsp vanilla extract
  • 2 eggs, room temperature
  • 1 cup buttermilk
  • 2 cups fresh blueberries
  • 1/3 cup flour for dusting blueberries

Topping

  • 1/3 cup oats
  • 1/3 cup all-purpose flour
  • 2 tsp SPLENDA® Naturals Stevia Sweetener
  • 2 tbsp butter, room temperature
  • 1/4 cup chopped walnuts (optional)

Instructions

Topping Preparation

  1. Combine all topping ingredients except walnuts in a small bowl. Use a fork to mix until you achieve coarse crumbs. Set aside.

Blueberry Preparation

  1. In a separate small bowl, gently toss the fresh blueberries with 1/3 cup of flour until the berries are lightly coated. This helps prevent them from sinking during baking.

Cake Baking

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly spray the parchment paper with cooking spray.
  3. In a large mixer bowl, combine the room temperature butter and SPLENDA® Naturals Stevia Sweetener. Beat on medium speed until the mixture is light and fluffy.
  4. Beat in the vanilla extract and eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Slowly add the dry ingredients (1-1/2 cups flour, cornmeal, baking soda, baking powder, and salt) alternately with the buttermilk, beating well after each addition until just combined. Be careful not to overmix the batter.
  6. Pour half of the cake batter into the bottom of the prepared pan, spreading it evenly.
  7. Sprinkle a portion of the prepared streusel mixture over this first layer of batter.
  8. Evenly sprinkle about half of the floured blueberries on top of the streusel.
  9. Fold the remaining floured blueberries into the remaining cake batter in the bowl. Gently spoon this remaining blueberry-filled batter over the layer in the pan.
  10. Finally, sprinkle the rest of the streusel topping evenly over the top of the cake. If desired, add the chopped walnuts at this stage.
  11. Bake for 55-65 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean.
  12. Let the coffee cake cool in the pan on a wire rack for at least 15-20 minutes before lifting it out using the parchment paper overhang.
