Ingredients

Donuts

  • 2 cups mashed blueberries with their juice
  • 1 cup plain Greek yogurt I used Chobani
  • 2 eggs – lightly beaten

Streusel Topping

  • 2 tbsp firm stick butter
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 tsp cinnamon

Glaze

  • 1 cup confectioners sugar
  • 1 tbsp sweetened condensed milk- room temp
  • 1-2 tbsp milk

Instructions

Donuts

  • Preheat your donut machine or preheat your oven to 350 degrees F (175 degrees C) if using a donut pan.
  • In a large bowl, combine the all-purpose flour, granulated sugar, and baking powder. Whisk these dry ingredients together thoroughly to ensure even distribution.
  • To the dry ingredients, add the lightly beaten eggs, then the plain Greek yogurt, and finally the melted and slightly cooled butter. Whisk until just combined, being careful not to overmix, as this can lead to tough donuts.
  • Gently fold in the mashed blueberries with their juice. The batter will be thick and vibrant with blueberry goodness.
  • Transfer the batter to a pastry bag (or a large Ziploc bag with a corner snipped off for easy piping) and pipe into the wells of your mini-donut maker or a full-size donut pan. Fill each well about two-thirds full to allow for rising.
  • Cook for approximately 6 minutes in a mini-donut machine, or for 10-12 minutes if using a full-size donut pan in the oven, until golden brown and a toothpick inserted into a donut comes out clean.
