Sweet potatoes are nutritional powerhouses, packed with vitamins, minerals, and fiber. They are an excellent source of Vitamin A (in the form of beta-carotene), Vitamin C, manganese, and potassium. Incorporating them into baked goods, like these flavorful muffins or even savory dinner rolls, not only enhances their flavor but also boosts their nutritional profile. Their natural sweetness means you can often reduce the amount of added sugar in your recipes, making for a healthier treat without compromising on taste. Beyond their sweetness and nutritional benefits, the unique starchiness of sweet potatoes lends an incredible body and silky thickness to baked goods. They create a wonderfully moist crumb and a tender texture that makes these muffins truly stand out. It’s a win-win: delicious flavor, enhanced nutrition, and superior texture!

Beyond just Thanksgiving casseroles, sweet potatoes can be a fantastic, everyday ingredient in your kitchen. They are incredibly adaptable, working well in both sweet and savory applications. For baking, they are often pureed or mashed, contributing a creamy consistency that enriches batters and doughs. The specific variety of sweet potato can also influence the flavor and color of your final product; for instance, O’Henry sweet potatoes, as used in this recipe, offer a slightly milder, more nuanced sweetness that blends beautifully with the other ingredients without overpowering them. Exploring sweet potatoes in your baking opens up a world of culinary possibilities, from breakfast muffins to decadent desserts, providing a healthful twist to classic recipes.

Servings: 16
Prep Time: 15 mins
Cook Time: 20 mins
Total Time: 35 mins

Ingredients

Muffins

  • 3 large eggs
  • ⅓ cup sour cream
  • 1 cup baked sweet potato mash (I used O’Henry Sweet Potatoes)
  • ¾ cup vegetable/canola oil
  • 1 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups walnuts or pecans
  • 1 tbsp raw sugar

Glaze

  • ½ cup confectioners sugar
  • 3 tsp milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 12-well muffin pan and an additional 4-5 wells of another pan (the recipe yields approximately 16 muffins).
  2. In a large mixer bowl, beat the eggs with sour cream, oil, and sweet potato mash until well combined.
  3. Gradually beat in the brown sugar and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in half of the walnuts or pecans.
  7. Divide the batter evenly into the prepared muffin wells. (A medium cookie scoop can help achieve even portions).
  8. Sprinkle the remaining walnuts or pecans and the raw sugar over the tops of the muffins.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. While the muffins cool, prepare the glaze by combining the confectioners’ sugar and milk in a small bowl. Whisk until smooth.
  11. Once the muffins have cooled completely, drizzle the glaze generously over the top of each muffin.
  12. Enjoy your freshly baked Glazed Sweet Potato Nut Muffins!
