Do you adore brownies? We certainly do! Growing up, the comforting aroma of brownies baking was a frequent joy in our home. My mother, a talented cake decorator and treat maker, often reached for a boxed mix for brownies and the chocolate chip cookie recipe from the back of the bag. While her other creations were elaborate, convenience always won when it came to these classic treats. She never seemed to venture into making them from scratch, and honestly, we didn’t mind – those mixes are popular for a reason!

One Bowl Brownies - Easy Fudgy Chocolate Recipe

My approach to baking, however, diverges a bit from my mother’s. Whenever possible, I prefer to bake from scratch. While my pantry is still stocked with various mixes for quick solutions or as components in other recipes, there’s a special place in my heart (and my recipe box) for a truly homemade, over-the-top brownie. That’s where this incredible one-bowl recipe shines. It consistently delivers the perfect texture and rich flavor, making it my go-to every single time.

Delicious chocolate chip brownies made in one bowl

Brownie enthusiasts, much like cookie connoisseurs, typically fall into two main categories: those who prefer cake-like brownies and those who crave fudgy, dense ones. Often, people who enjoy thick, cakey cookies also lean towards cakey brownies, while lovers of thin, buttery cookies usually prefer the deeply fudgy variety. Having perfected a chocolate chip cookie recipe that harmonizes both preferences into an utterly delicious hybrid, I was determined to achieve the same balance for my brownies.

Frequently Asked Questions About Baking the Best Brownies

How to achieve perfect brownie cuts?

Cutting brownies perfectly can make all the difference, whether for presentation or portion control. The ideal method often depends on how many servings you need and the desired size. I typically cut my brownies into a 3×3 grid, yielding 9 generous pieces. However, for smaller portions, a 4×4 grid will give you 16 brownies. Alternatively, a 2×2 cut results in just 4 super-sized, indulgent brownies. Remember, I’m referring to a grid of brownies (e.g., 3 brownies by 3 brownies), not a precise 3-inch by 3-inch measurement. The most important tips for clean cuts include using a hot knife (wiping it clean after each slice), or surprisingly, a plastic knife. Ensuring the brownies are completely cooled before cutting is paramount. For even cleaner slices, if your toppings allow, chilling the brownies in the refrigerator beforehand works wonders!

Are these homemade brownies suitable for gifting?

Absolutely! These super easy brownies make fabulous gifts for friends, neighbors, or anyone deserving of a sweet treat. For effortless gift-giving, we often use disposable pans. It’s a thoughtful gesture that’s appreciated any time of year. Everyone loves receiving a delicious dessert, right? We especially enjoy gifting these the day before a holiday. For an extra special touch, you could even present them in a new baking pan, making the pan itself part of the gift!

Why do my brownies turn out cakey instead of fudgy?

Achieving that desired chewy and fudgy texture is key for a truly satisfying brownie. If yours are coming out cakey, there are two common culprits. First, over-baking is a frequent issue. Brownies continue to cook and solidify as they cool, so it’s often better to slightly under-bake them. When a toothpick inserted into the center still has a few moist crumbs clinging to it, that’s usually a good sign they’re done. The second reason can be attributed to incorrect flour measurement. Scooping flour directly from the bag can compact it, leading to an excessive amount in your recipe. The proper method is to lightly spoon the flour into your measuring cup and then level it off with a straight edge. This prevents adding too much flour, which can dry out your brownies and give them a cake-like consistency.

What’s the best way to store these delicious brownies?

For optimal freshness and chewiness, these brownies are best stored in their baking pan, tightly covered with foil or plastic wrap, and left at room temperature on the counter. In our experience, they rarely last beyond 24 hours – my family tends to make them disappear almost instantly! The rich flavor and perfect texture are best enjoyed when they haven’t been exposed to the drying effects of refrigeration, so keep them covered and accessible.

Can I double this one-bowl brownie recipe?

While I often double this recipe to have more brownies on hand, I always recommend baking them in two separate pans. This allows you to maintain the original baking time without needing to adjust for a larger, thicker batch, which can be tricky to gauge. Additionally, this recipe is designed to produce a specific thickness that contributes to its incredible texture. Doubling the batter into a single, larger pan would alter this ideal thickness, potentially changing the desired fudgy-chewy consistency.

Dutch-process vs. regular cocoa powder: what’s the difference?

Understanding the difference between cocoa powders is crucial for successful baking. Dutch-processed cocoa powder, also known as alkalized cocoa, is made from cocoa beans that have been washed in an alkaline solution (like potassium carbonate). This process neutralizes the beans’ acidity, resulting in a darker color and a milder, less bitter flavor. Crucially, because it’s neutral, Dutch-process cocoa does not react with baking soda (which needs an acid to activate). Therefore, it’s often paired with baking powder, which contains its own acidic component for leavening. Regular, natural cocoa powder, on the other hand, is acidic. This acidity reacts with baking soda, providing lift and a characteristic flavor. Using the wrong type of cocoa powder can dramatically affect the rise, texture, and taste of your baked goods. Always pay close attention to the specific type of cocoa powder called for in a recipe and stick to it for the best results, especially with homemade brownies with cocoa powder.

Which baking dish do you recommend for these brownies?

The right baking pan can significantly impact your brownies. For this recipe, I highly recommend using a sturdy metal baking pan, as it conducts heat evenly and helps achieve those desirable crispy edges. However, I recently discovered this super awesome silicone baking pan, which I’m excited to try next. Silicone pans are fantastic for easy release, meaning your brownies should pop right out without sticking, making cleanup even simpler!

Can brownies be stored in the refrigerator?

Yes, brownies can be stored in the fridge, but it’s crucial to cover them properly to prevent them from drying out. Ensure they are tightly wrapped in the baking pan with plastic wrap or stored in an airtight container. Keep in mind that refrigeration can alter their texture, making them firmer. If your brownies contain marshmallows or other chewy additions, these can become quite hard when cold. For best enjoyment after refrigeration, place a brownie on a microwave-safe plate and microwave it for 15-20 seconds to soften it up before serving.

How do I accurately measure flour for baking?

Accurate flour measurement is vital for successful baking, especially for achieving the perfect brownie texture. The universally recommended method is to “spoon and level.” This involves gently spooning the flour into your dry measuring cup until it overflows, then using a straight edge (like the back of a knife) to level off the excess without compacting the flour. Avoid scooping directly from the flour bag, as this can pack the flour, leading to you using too much and resulting in dry, cakey brownies. Alternatively, for this recipe, you can also gently fluff your flour with a spoon before carefully scooping it into the measuring cup, taking care not to pack it down. Either method will help ensure you have just the right amount for moist and fudgy results.

Step-by-Step Instructions: How to Make One-Bowl Brownies

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Set it aside.
  3. In a medium microwave-safe bowl, melt the salted butter in the microwave for about 30 seconds. Stir until completely melted and smooth.
  4. Once the butter is melted, whisk in the granulated sugar until the mixture is smooth and well combined.
  5. Next, add the large eggs, pure vanilla extract, and instant coffee granules to the butter-sugar mixture. Whisk until fully incorporated.
  6. In a separate small microwave-safe container, melt ½ cup of the milk chocolate chips. Heat at 50% power in 30-second increments, stirring after each, until smooth.
  7. Whisk the melted chocolate into the sugar-egg mixture until smooth, about 1 minute, creating a rich chocolate base.
  8. Using a large rubber spatula, gently stir in the all-purpose flour, unsweetened cocoa powder (not Dutch-process), and table salt. Mix until just combined, being careful not to over-mix. Over-mixing can develop the gluten in the flour, leading to a tougher, cakey brownie.
  9. Fold in most of the remaining milk chocolate chips, reserving a small portion to sprinkle on top of the brownies before baking.
  10. Pour the brownie batter evenly into your prepared pan. Scatter the reserved chocolate chips over the top.
  11. Bake for 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (not wet batter). This indicates a fudgy center.
  12. Allow the brownies to cool completely in the pan before attempting to cut them. This is crucial for clean, well-set brownies.
  13. (Optional) For an extra touch of elegance and flavor, dust with confectioners’ sugar before serving.

Can I add other mix-ins to these delicious brownies?

Absolutely! One of the many reasons I adore brownies is their incredible versatility. This one-bowl brownie recipe serves as a fantastic base for all sorts of delicious additions. Feel free to fold in peanut butter chips, white chocolate chips, chopped candy bars, nuts, or even a swirl of caramel. The possibilities are endless, allowing you to customize each batch to whatever craving strikes you!

Expert Tips for Cutting Brownies Cleanly

Achieving clean, attractive cuts for your brownies is easier with these simple tricks:

  • Use a hot knife: Dip a sharp knife into hot water, wipe it clean, and then make your cut. Repeat this for each slice to prevent sticking and achieve smooth edges.
  • Try a plastic knife: Surprisingly, a plastic knife often glides through brownies with less resistance, resulting in very clean cuts.
  • Ensure complete cooling: This is perhaps the most important tip. Brownies must be completely cooled, ideally at room temperature for several hours or even overnight, before cutting. Warm brownies will crumble and stick.
  • Chill them (if possible): If your brownie decorations or toppings allow, refrigerating the cooled brownies for 30-60 minutes can firm them up, making them much easier to slice cleanly.

Easy One-Bowl Brownies: Simple & Irresistible

How to make the best fudgy One Bowl Brownies

Essential Ingredients for Perfect One-Bowl Brownies

  • Salted butter, melted
  • Granulated sugar
  • Large whole eggs
  • Pure vanilla extract
  • Instant coffee granules
  • Milk chocolate chips (divided)
  • All-purpose flour
  • Unsweetened cocoa powder (ensure it’s not Dutch-process for this recipe)
  • Table salt

Can homemade brownies be frozen?

Yes, like many other baked goods, brownies freeze quite well. To best preserve their chewy texture, make sure to wrap them properly and keep them airtight. I recommend wrapping individual brownies or small batches tightly in plastic wrap, then placing them in a freezer-safe bag or container. While they will still taste delicious, be aware that upon thawing, brownies may “sweat” slightly, causing them to be moist or wet on the outside. This doesn’t affect their flavor, but they might not look as perfectly fresh as they did right out of the oven.

Can I omit the instant coffee from the recipe?

You can certainly leave out the instant coffee granules if you prefer, as they are not strictly necessary for the recipe’s structure. However, I highly recommend including them! The coffee doesn’t impart a noticeable coffee flavor to the brownies; instead, it acts as a magical flavor enhancer, deepening and enriching the chocolate notes. It truly makes the chocolate taste more intensely chocolatey. Give it a try with the coffee before deciding against it – you might be surprised by the delicious results!
