Ingredients

  • 1 12-oz can Diet Ginger Ale or 10-Calorie Ginger Ale, room temperature
  • 1 box Funfetti® cake mix

Frosting

  • 1-2 cans Funfetti® Frosting

Instructions

  • Preheat oven to 375ºF.
  • Line muffin tins with 18 muffin liners, spritz with a little cooking spray & set aside.
  • In a medium mixing bowl, pour the cake mix.
  • Slowly pour the diet Ginger Ale into the cake mix.
  • Whisk together until all lumps are gone and the batter is smooth.
  • Spoon batter evenly into the prepared muffin liners, filling each about ¾ full.
  • Bake for 10 minutes at 375ºF, then reduce the oven temperature to 350ºF.
  • Continue baking for an additional 8-10 minutes, or until the cupcakes spring back when lightly pressed in the centers.
  • Allow cupcakes to cool completely on a wire rack before frosting.

Frosting

  • Transfer the Funfetti frosting to a piping bag fitted with a large round tip for easy decorating.
  • Swirl frosting generously onto each cooled cupcake and top with the colorful sprinkles included in the frosting can (or your favorite extra sprinkles!).
