  • Combine the whipping cream, sweetened condensed milk & mint extract in the mixer bowl and beat for 4-6 minutes on medium-high speed. (as fast as you can mix it without it spattering out of the bowl). Mixture should look light & creamy.
  • Pour the mixture into a freezer-safe container & lightly sprinkle in your chocolate mint pieces.
  • Take a butter knife & drag it through the mixture to incorporate some of the mint pieces throughout without making them all sink to the bottom.
  • Cover & freeze 8-10 hours, preferably overnight to solidify before serving. If you try to serve too soon, while it is semi-soft, the mixture will melt quite quickly & become a soupy mess.
