  4. Heat the mixture over simmering water, stirring constantly, until the sugar is dissolved and it reaches 104 degrees F (40 C).
  5. Carefully transfer the mixture to a stand mixer bowl. Beat on medium-high speed for about 10 minutes until tripled in volume and pale.
  6. Gently fold in the all-purpose flour and cornstarch in small increments until just combined, being careful not to deflate the batter.
  7. Transfer the batter to the prepared pan, ensuring it’s not filled to the brim.
  8. Bake for 25-30 minutes, or until the center is set, a toothpick comes out clean, and the cake is golden brown.
  9. Allow the cake to cool completely in the pan on a wire rack before assembling.

Syrup

  1. In a small saucepan, combine ⅓ cup granulated sugar and ½ cup cherry juice.
  2. Bring to a boil over medium-low heat, then cook for 10 minutes until slightly thickened. Set aside to cool completely.

Whipped Cream

  1. In a stand mixer bowl, combine 2 ½ cups cold heavy cream and ¼ cup confectioner’s sugar.
  2. Stir on low speed until combined, then increase to medium-high, beating until stiff peaks form. Avoid overbeating.

Assemble

  1. Carefully remove the cooled cake from its pan. If domed, trim the top to create an even surface. Slice the cake horizontally into two thinner layers.
  2. Using a pastry brush, generously coat both cut sides of the cake layers with the cooled cherry syrup.
  3. Place one cake layer on your serving plate. Spread a thin layer of whipped cream over it.
  4. Cut some maraschino cherries in half and arrange them over the cream.
  5. Position the second cake layer on top of the cherries and gently press into place.
  6. Spread an even layer of whipped cream over the sides and top of the entire cake.
  7. Gently press the white chocolate shavings or pieces onto the sides of the cake.
  8. Transfer the remaining whipped cream to a piping bag fitted with a large star tip.
  9. Pipe eight large swirls around the outer edge of the top of the cake.
  10. Chill the cake in the refrigerator for 2-4 hours to allow it to set.
  11. Before serving, take the cake out of the fridge for 20-30 minutes. Insert a whole cherry on top of each piped cream swirl.
  12. Slice and serve your beautiful White Forest Cake.

Notes

Storage: Store leftover White Forest Cake in an airtight container in the refrigerator for up to 2 days. For best taste, allow to come to room temperature for 20-30 minutes before serving.
