Instructions

  1. Spray a 13×9 baking pan with non-stick cooking spray or shortening and then coat lightly with flour. Set aside.
  2. Preheat the oven to 350 degrees F.
  3. Melt the white chocolate in a small bowl (see step 1 for detailed instructions) and allow it to cool to room temperature while mixing the cake.
  4. In a large bowl, beat together cake mix, egg whites, oil, buttermilk, and peppermint extract until smooth.
  5. Stir in the cooled, melted white chocolate until smooth and completely combined, being careful not to over-mix.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove the cake from the oven and allow it to cool to a warm temperature on a wire rack for about 10-15 minutes.
  9. In a separate large bowl, whisk together the instant pudding mix and milk vigorously until it is completely smooth and thickened.
  10. Using the handle of a wooden spoon, gently poke holes into the warm cake in an even pattern.
  11. Slowly pour the pudding mixture into the holes in the cake, ensuring it seeps in.
  12. Smooth any remaining pudding mixture on top of the cake with a spatula.
  13. Cover the cake with plastic wrap and place it in the refrigerator for at least 4 hours or overnight to set completely.
  14. When you are ready to serve, frost with thawed whipped topping.
  15. Then, sprinkle the top of the cake evenly with the crushed candy cane bits.
  16. Serve immediately and store any leftovers in the refrigerator, covered.
