- Bake for 10-12 minutes. You want the cookies slightly underbaked for ice cream sandwiches.
- Remove from the oven and place on a wire rack to cool completely.
Assemble the Ice Cream Sandwiches
- Remove the ice cream from the freezer and let it soften slightly.
- Take 1 scoop of ice cream and place it on the bottom of one cookie, then top with another cookie that is similar in size, and gently press them together.
- Dip the sides of the cookie sandwich in mini chocolate chips or sprinkles, if desired.
- Place on a baking sheet and return to the freezer until ready to serve (at least 2-4 hours).
- Store leftovers in the freezer, individually wrapped.
