  • Cook Potatoes: In a large pot or Dutch oven, combine the diced potatoes, onion, and chicken broth. Bring the mixture to a boil over high heat, then reduce the heat to a simmer. Cook for 10-12 minutes, or until the potatoes are fork-tender.
  • Prepare Roux: While potatoes cook, melt butter in a separate saucepan over medium heat.
  • Stir in the flour and cook for 1-2 minutes, stirring constantly with a whisk, to form a smooth paste. This cooks out the raw flour taste.
  • Gradually whisk in the whole milk, continuing to stir until the mixture thickens into a creamy sauce.
  • Stir the prepared roux directly into the pot with the cooked potatoes and broth. This will immediately begin to thicken your soup base.
  • Add Remaining Ingredients: Stir in the diced ham, garlic powder, and smoked paprika (if using). Continue to simmer for 5 minutes, allowing flavors to combine.
  • Gradually stir in the shredded cheddar cheese until it is completely melted and the soup is creamy and smooth. You can turn the heat down to low to prevent clumping.
  • Serve: Taste and adjust seasonings as needed with salt and pepper. Serve the Cheesy Ham and Potato Soup warm, garnished generously with fresh sliced green onions and extra cheese, if desired.
