White Chocolate Cake (Mud Cake)
This White Chocolate Cake, often referred to as a Mud Cake, is a wonderfully dense, exquisitely rich, and incredibly moist single-layer dessert that is surprisingly simple to make and versatile enough to serve for any occasion.

Ingredients
- 10.5 ounces (approx. 300g) high-quality white chocolate, finely chopped
- 1 cup (2 sticks / 226g) unsalted butter, softened
- 1 cup (240ml) half and half or whole milk
- ¾ cup + 1 tablespoon (165g) granulated sugar
- 2 teaspoons pure vanilla extract
- 2 large eggs, at room temperature
- 1 ¾ cups (210g) all-purpose flour, sifted
- 1 teaspoon baking soda
- ¼ teaspoon fine table salt
Instructions
- Preheat the oven to 325 degrees Fahrenheit (160°C). Prepare an 8×8 inch square cake pan or baking dish by lining it with parchment paper, allowing an overhang on the sides for easy lifting. Lightly grease any exposed parts of the pan. Set aside.
- In a double boiler (or a heatproof medium glass bowl resting over a large saucepan that is half-full of gently simmering water, ensuring the bowl does not touch the water), combine the chopped white chocolate, softened butter, half and half (or whole milk), and granulated sugar. Heat gently, stirring occasionally, until all ingredients are completely melted and smoothly combined.
- Carefully remove the mixture from the heat and allow it to cool to room temperature for 15-20 minutes. This is crucial to prevent the eggs from scrambling when added.
- Once cooled, whisk in the vanilla extract until fully incorporated. Then, whisk in the eggs one at a time, ensuring each is fully integrated before adding the next, until the mixture is cohesive and smooth.
- In a separate small bowl, combine the sifted all-purpose flour, baking soda, and salt. Stir well to ensure even distribution.
- Gradually add the dry flour mixture to the wet chocolate mixture, about a half cup at a time. Using a rubber spatula, gently fold the ingredients together until just combined. Avoid overmixing, as this can develop gluten and lead to a tough cake. A brief whisk can be used at the end to eliminate any stubborn lumps, but do not overdo it.
- Transfer the prepared batter into your lined 8×8 baking pan, smoothing the top. Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean or with only a few moist crumbs attached. If the top begins to brown too quickly, loosely tent the cake with aluminum foil.
- Once baked, remove the cake from the oven and let it cool completely to room temperature on a wire rack. This allows the cake to set and prevents crumbling. Once cooled, use the parchment paper overhang to carefully lift the cake out of the pan. It is now ready for your chosen frosting and decorations.
