Smoked Burgers - juicy and packed with smoky flavor

Why Choose Smoked Burgers?

When the sun is shining and the desire for a fantastic outdoor meal calls, it’s time to venture beyond the conventional. Smoked burgers offer a unique culinary experience for several compelling reasons:

  • Unmatched Flavor Depth: The star of the show is, undeniably, the smoke. Slow smoking allows wood smoke to penetrate the meat, creating complex, savory notes that are distinctly different and far richer than anything you’d get from direct grilling.
  • Incredible Juiciness: Smoking at lower temperatures helps the meat retain its natural moisture, resulting in incredibly tender and juicy burgers that won’t dry out. The fat renders slowly, keeping the patties moist throughout the cooking process.
  • Impressive & Gourmet: Serving smoked burgers elevates any casual gathering. It shows a level of culinary effort and expertise that guests will surely appreciate, making your barbecue truly stand out.
  • Hands-Off Cooking: While traditional grilling requires constant attention, smoking allows for a more relaxed approach. Once your smoker is set, you can generally “set it and forget it” for a good portion of the cooking time, freeing you up to enjoy your company.
  • Versatility: Just like grilled burgers, smoked burgers are incredibly versatile when it comes to seasoning, cheese choices, and toppings. The smoky base complements a wide array of flavors.

Whether you’re using a Traeger pellet grill, a Pit Boss, an electric smoker, or even a classic charcoal grill with wood chips, the secret lies in that glorious smoky essence. It transforms a simple ground beef patty into an absolutely magical eating experience. So, don’t wait! Grab your apron, fire up that smoker, and let’s create some burger magic today!

Common Questions About Smoked Burgers

Which is the best beef for smoked burgers?

For the juiciest and most flavorful smoked burgers, ground chuck is highly recommended, especially an 80% lean (20% fat) blend. The higher fat content renders beautifully during the slow smoking process, contributing significantly to both flavor and moisture. While leaner beef options like 90/10 might shrink less, they can result in a drier burger. The last thing you want is for your delicious patty to shrink to half the size of your bun! An 80/20 blend strikes the perfect balance.

How do I ensure my smoked burgers are cooked perfectly?

An instant-read meat thermometer is an indispensable tool for smoking burgers. It’s your best friend for hitting that perfect level of doneness and ensuring food safety. Simply insert the thermometer into the thickest part of the patty to check the internal temperature. For medium-rare, aim for 130-135°F; medium, 140-145°F; medium-well, 150-155°F; and well-done, 160°F or higher. Many affordable and even Bluetooth-enabled thermometers are available these days, making precision cooking easier than ever.

What kind of wood should I use for smoking burgers?

The choice of wood greatly influences the final flavor profile of your smoked burgers. Mesquite wood chips are a popular choice, known for their strong, robust, and slightly spicy smoke flavor that pairs wonderfully with beef. However, don’t be afraid to experiment! Other excellent options include:

  • Hickory: Offers a classic, bold smoke flavor that’s slightly sweet and savory, a favorite for many barbecue enthusiasts.
  • Apple or Cherry: Provide a milder, sweeter, and more fruity smoke, ideal if you prefer a less intense smoky note. These work well with pork but can add a subtle sweetness to beef too.
  • Pecan: Delivers a rich, nutty, and milder smoke than hickory, creating a complex and inviting aroma.
  • Oak: A medium-strength smoke, versatile and classic, offering a clean, woody flavor that complements beef beautifully.

Ultimately, the “best” wood comes down to personal preference. Try different types of wood chips or pellets to discover your perfect sweet spot.

Storage Tips for Smoked Burgers

Adding smoke to any meat truly levels up its flavor, and these burgers are no exception. The difference it makes in the eating experience is profound. While best enjoyed fresh and hot off the smoker, you can certainly store leftovers for future enjoyment.

Refrigerator

Store any leftover smoked hamburgers in an airtight container in the refrigerator for up to 3-4 days. This ensures they remain fresh and safe to eat.

Freezer

If you have a larger batch or want to prepare ahead, cooked smoked burgers can be frozen for up to 3 months. To prevent freezer burn and maintain quality, wrap each patty tightly in plastic wrap, then place them in a freezer-safe bag or container. Nothing is worse than a freezer-burned, hockey-puck-like burger patty!

When reheating from the freezer, it’s best to thaw them in the refrigerator overnight. Reheat gently on a skillet, in the oven, or even briefly back on the smoker at a slightly higher temperature, ensuring they reach an internal temperature of 165°F (74°C).

Expert Tips for Smoking Burgers

Achieving the perfect smoked burger is easy with a few key techniques. Personally, I love a lot of smoke flavor in my beef, but you can easily adjust this to your own taste by changing the smoke setting on your smoker. Here are some pro tips for success:

  • Preheat Properly: Always preheat your pellet grill or smoker to the desired temperature before placing the burgers on. Consistent temperature is key for even cooking and smoke penetration.
  • Don’t Press the Patties: For the best results, resist the urge to press down on the beef patties with your spatula while they are cooking. This common mistake squeezes out precious juices and fat, leading to a dry burger.
  • Use Parchment Paper for Shaping: When forming your burger patties, placing a square of parchment paper between them (or using it on your work surface) can prevent sticking and make handling much easier.
  • Quality Beef is Key: The foundation of a great burger is great beef. Always opt for the best quality ground beef you can find at your grocery store. High-quality meat significantly contributes to the final taste and texture.
  • Dimple the Patties: Create a slight indentation in the center of each patty before smoking. This helps prevent the burger from puffing up into a ball during cooking, ensuring a flatter, more even shape.
  • Monitor Internal Temperature: As mentioned, a meat thermometer is crucial. Smoke until the patties are about 10-15°F below your desired final temperature, then increase the heat (if desired) for a quick sear.
  • The Reverse Sear (Optional but Recommended): For an extra layer of flavor and texture, after smoking your burgers at a lower temperature, remove them, crank up your smoker (or use a hot cast iron skillet), and sear them quickly for a beautiful crust.
Burger rub seasoning for smoked burgers

Ingredients for Smoked Burgers

The beauty of these smoked burgers lies in their simple yet powerful flavor combination. The teriyaki sauce, in particular, really mingles exceptionally well with the smoky essence you’ll infuse into these patties. It’s truly delicious!

  • 2 pounds Ground beef (80% lean recommended)
  • 2 tablespoons Traeger burger rub – beef seasoning (or your favorite beef rub)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Teriyaki sauce
  • 1 tablespoon Dried minced onions
  • 2 teaspoons Seasoned salt
  • 8 slices Cheese slices (cheddar, provolone, or American – optional)
  • 8 Burger buns and your favorite condiments for assembling

How to Make Smoked Burgers

Get ready to get a little messy – or use gloves if you prefer! Either way, using your hands for the mixing part ensures all the ingredients are properly incorporated and evenly distributed throughout the beef mixture. It’s the best way to guarantee every burger patty is bursting with flavor!

  1. Preheat Smoker: Begin by preheating your smoker to 200°F (93°C). Allowing the smoker to come to temperature ensures consistent heat and smoke production.
  2. Combine Ingredients: In a large mixing bowl, gently combine the ground beef, your chosen burger seasoning (like Traeger burger rub), Worcestershire sauce, teriyaki sauce, dried minced onions, and seasoned salt.
  3. Mix Gently: Work the ingredients together with your hands until they are just incorporated. Be careful not to over-mix, as this can lead to tough burgers. Gentle handling keeps the patties tender.
  4. Form Patties: Divide the mixture into 8 equal portions. Roll each portion into a ball, then gently flatten it into a puck-shape, creating about ¼ pound burgers. Place these formed patties on a wire rack. Using a wire rack makes it easier to transfer them to the smoker and allows for even smoke circulation around each patty.
  5. Smoke Low and Slow: Once your smoker is heated to 200°F, carefully place the wire rack with the formed burger patties onto the smoker grates. Smoke for approximately 90 minutes. This low-temperature smoking allows the burgers to absorb maximum smoky flavor.
  6. Increase Heat & Finish Cooking: After 90 minutes, increase the smoker’s temperature to 300°F (149°C). Continue cooking until the burgers reach an internal temperature of 160°F (71°C) for well-done, or your desired doneness (e.g., 140-145°F for medium). For us, this higher-heat stage typically takes about 15-25 minutes, depending on the thickness of the patties and your smoker’s efficiency. If adding cheese, place slices on the patties during the last 5-10 minutes of this stage to allow them to melt perfectly.
  7. Rest & Serve: Carefully remove the smoked burgers from the smoker. Let them rest for 5-10 minutes while you prepare your buns and gather your favorite toppings. Resting allows the juices to redistribute throughout the patty, ensuring a moist and delicious burger.

Creative Variations and Add-Ins for Smoked Burgers

One of the best parts about making burgers is the endless possibilities for customization. I personally love putting some grilled pineapple rings on my burgers, especially when teriyaki sauce is involved – you can even cook the pineapple right alongside the patties for added smoky sweetness!

  • Cheese Lovers Rejoice: Beyond classic cheddar, try a slice of smoked gouda, pepper jack for a kick, provolone, blue cheese crumbles, or even a smoked brisket cheese for an incredibly meaty twist.
  • Spice It Up: Enhance the base flavor with a dash of garlic powder, onion powder, black pepper, or a pinch of cayenne for extra heat. Mix in some diced jalapeños for a spicy patty.
  • Bun Twist: Don’t stick to plain white buns. Experiment with brioche buns for richness, pretzel buns for a unique texture and flavor, ciabatta rolls, or even a sturdy sourdough for a different experience.
  • Veggie Delight Toppers: Add a smoky grilled portobello mushroom cap (this is my favorite!), caramelized onions, roasted bell peppers, or even a fried egg for a breakfast-style burger.
  • Sauce Sensations: Beyond teriyaki, consider a homemade special burger sauce, a tangy aioli, sriracha mayo, or a creamy avocado lime dressing.
  • Sweet & Savory: In addition to grilled pineapple, crispy fried onions, pickled red onions, or a dollop of fig jam can add intriguing sweet and savory notes.

  • 2 tsp seasoned salt
  • 8 slices cheddar cheese – optional

Instructions

  1. Preheat the smoker to 200 degrees.
  2. In a medium mixing bowl, combine the beef, seasoning, Worcestershire sauce, teriyaki sauce, minced onions, and seasoned salt.
  3. Work the ingredients together with your hands until just incorporated. Take care to not over-mix.
  4. Divide the mixture into 8 equal portions – rolling into balls and then slightly flattening into a puck-shape and place them on a wire rack. This will give you 8 ¼ pound burgers.
  5. Once the smoker is heated, place the formed burger patties on the smoker. I like to leave them on the wire rack so there is less handling of them before they are cooked.
  6. Smoke for about 90 minutes – then increase the heat to 300 and cook until they reach an internal temperature of 180 degrees. For us – this took about 20 minutes.
  7. Remove and let the burgers rest while you assemble your buns.

Notes

If adding cheese – place it on the patties when you increase the heat.
80% lean you will get more shrinkage but there will be more flavor. If you want less shrinking, choose a leaner blend.

Equipment

  • electric pellet smoker
