Instructions

  1. Cream the butter and brown sugar together in a large bowl until light and fluffy.
  2. Beat in molasses and egg until well combined.
  3. Whisk the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a separate bowl.
  4. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  5. Divide the dough in half, flatten into disks, wrap in plastic, and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C).
  7. Line baking sheets with parchment paper.
  8. Roll the dough out on a lightly floured surface until it is about 1/4-inch thick.
  9. Cut with cookie cutters and place on the prepared baking sheets, about 1 inch apart.
  10. Bake for 8–10 minutes, or until edges are firm.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
