Crispy, juicy Bang Bang Chicken coated in a creamy, sweet-and-spicy sauce! This easy homemade version is better than takeout and ready in under 30 minutes.

Ingredients

For the Chicken:

  • 1 lb chicken breasts, boneless, skinless, cut into 1-inch pieces
  • 1 cup buttermilk
  • 1 cup cornstarch
  • 1 cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • Oil for frying (canola, vegetable, or peanut)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1-2 tbsp sriracha (to taste)
  • 1 tbsp honey (optional, for extra sweetness)

Instructions

  1. Combine the diced chicken with the buttermilk in a large bowl. Toss to coat and let it marinate for 15 minutes.
  2. Stir the cornstarch, flour, salt, pepper, and paprika together in a small bowl.
  3. Heat the oil in a deep skillet to 350°F (175°C).
  4. Remove the chicken from the buttermilk, one piece at a time. Dredge the pieces in the flour/seasoning mixture until coated well.
  5. Carefully transfer the breaded chicken to the hot oil, frying in batches until golden and cooked through, about 4–5 minutes per batch.
  6. Remove from the oil and drain on a plate lined with paper towels.
  7. Whisk the mayonnaise, sweet chili sauce, sriracha, and honey together in a large bowl until smooth.
  8. Add the cooked crispy chicken to the sauce and toss to coat thoroughly.
  9. Serve immediately with an additional drizzle of sauce, if desired, for maximum flavor and crispiness.

Notes: For a lighter version, bake or air fry the chicken instead of frying. Adjust sriracha to your preferred spice level. Garnish with chopped scallions or toasted sesame seeds for extra flavor and texture.
