Cover with plastic wrap and a dish towel, and let it rise in a warm space for 60-90 minutes until it doubles in size.
  7. Once the dough has doubled, gently punch it down and turn it out onto a lightly floured surface. Divide it into 15 equal-sized portions. Roll each portion into a smooth ball and arrange them in a lightly greased 9×13 baking dish. Cover with plastic wrap and let rise in a warm space for approximately another hour, or until they have doubled in size again.
  8. After the second rise, adjust your oven rack to the lower-middle position and preheat the oven to 375 degrees F (190 C).

Notes

  • This recipe is specifically designed for instant yeast or rapid-rise yeast. Active dry yeast will not yield the same results.
  • To achieve 15 evenly sized rolls, a helpful technique is to first divide the dough in half, then divide each half into halves again, and so on, until you have roughly 16 portions. If a few portions are smaller, you can redistribute a small amount from the larger ones to ensure uniform size, aiming for 15 rolls. Alternatively, simply make 16 rolls.
  • Make Ahead Option (Refrigerated Dough): Follow the recipe through step 6 (forming balls and placing in the baking dish for the second rise). Instead of letting them rise in a warm place, cover them and place them in the refrigerator for 12-16 hours. When you’re ready to bake, take the rolls out of the fridge and let them sit at room temperature for 1-2 hours to complete their second rise before proceeding with baking as instructed.
  • Freezing Raw Dough: Prepare the dough through the shaping process (step 6). Let the dough balls rest for 10 minutes. Then, arrange them in a single layer on a baking sheet and freeze until solid.   • Freezing Baked Rolls: Once baked and cooled, wrap each roll individually in plastic wrap, then place them all into several zip-top freezer bags. Freeze for up to 2-3 months. To reheat, thaw overnight at room temperature. For best results, warm them in a preheated oven at 300 degrees F (150 C) for about 10 minutes.
