The inspiration for this easy no-bake dessert struck during a craving for classic German chocolate cake, particularly its signature rich, gooey frosting. However, the thought of firing up the oven and baking a whole cake using my trusty cake pan wasn’t appealing at the moment. I wanted that distinct flavor profile – the sweet coconut and crunchy pecans – without the extensive baking process. This led to the creation of this simple no-bake chocolate cheesecake, ingeniously topped with a quick German chocolate frosting, capturing all the essence of the classic cake in a new, exciting format.
For serving, I decided to utilize these charming glass bowls, which have become an absolute favorite in my kitchen. The best part? They come with lids! This makes storage incredibly easy – simply pop on the lid before placing them in the fridge. The convenience of individual desserts is unparalleled; no need for slicing or serving each person. They are perfectly portioned grab-and-go treats, making entertaining a breeze and satisfying individual cravings effortlessly. This makes the No Bake German Chocolate Cheesecake even more appealing for any occasion.
Crafting the Perfect No Bake Chocolate Cheesecake

While exploring various cheesecake recipes (a habit I confess to, always ensuring I’m using my cream cheese wisely and not missing out on another fantastic creation), I’ve observed that the mention of “no-bake cheesecake” can sometimes spark quite a debate. It seems some baking enthusiasts hold a strong belief that “cheesecake should be traditional,” implying a baked preparation is the only true form. However, I believe there’s room for all kinds of deliciousness in the culinary world.
Personally, I am a huge advocate for variety. While I absolutely adore a classic New York-style cheesecake – its dense, creamy texture is irresistible – I also cherish the simplicity and unique texture of the no-bake variety. After all, dessert is meant to be a treat, and I’m certainly not one to be overly picky when it comes to desserts made with cream cheese. The beauty of a no-bake option lies in its convenience and often lighter, airier texture, which can be particularly refreshing. This versatility makes it a perfect candidate for innovation, leading to creations like this fantastic No Bake German Chocolate Cheesecake.
This is precisely why I was so thrilled when no-bake cheesecake was chosen as the theme for this month’s “12 Bloggers” challenge. It provided the perfect opportunity to combine two beloved dessert concepts into one spectacular dish: a creamy, rich chocolate cheesecake base topped with that irresistible German chocolate frosting. This No Bake German Chocolate Cheesecake truly delivered. Beyond this delightful recipe, make sure to explore all the other amazing no-bake creations shared by my fellow blogging friends. Doesn’t that just look absolutely amazing? I could certainly go for another serving right now. The layers of crunchy Oreo, smooth chocolate, and sweet, nutty frosting create a symphony of textures and flavors that are hard to resist.
Making this German chocolate cheesecake is a breeze, starting with the crushed Oreo cookie crust. This simple foundation offers a perfect contrast to the creamy filling. The chocolate cheesecake layer itself comes together with just a few ingredients, whipped to a light and airy consistency. But the real star is the homemade German chocolate frosting – a rich, coconut and pecan-infused topping that makes this dessert truly special. It’s the perfect blend of traditional flavors and modern convenience, ideal for impressing guests or simply treating yourself.

Ingredients
Crust
- 12 Oreo cookies, crushed (approx. 3 per bowl)
Cheesecake
- 8 ounces cream cheese, room temperature
- ½ cup confectioners sugar
- 1 tbsp sour cream + 1 tsp
- ¼ tsp vanilla extract
- ½ cup semi-sweet chocolate chips, melted & cooled to room temperature
German Chocolate Frosting
- 3 egg yolks
- 1 cup granulated sugar
- 1 cup evaporated milk
- ½ cup butter
- 1½ cups sweetened flaked coconut
- 1 cup chopped pecans
Instructions
Cheesecake Assembly
- Crumble the Oreo cookies into individual serving bowls or a cheesecake pan and set aside.
- In a mixing bowl, beat the cream cheese until it is light, creamy, and smooth.
- Add the confectioners sugar, sour cream, and vanilla extract to the cream cheese mixture. Beat thoroughly until well combined.
- Slowly incorporate the melted and cooled chocolate chips into the cream cheese mixture. Once combined, increase the mixer speed and whip for 2-3 minutes to achieve an airy and fluffy texture.
- Spoon the prepared chocolate cheesecake mixture evenly over the crushed Oreos in your chosen bowls or pan. Place the bowls or pan in the refrigerator to chill while you prepare the frosting.
Frosting Preparation
- In a saucepan, combine the egg yolks, granulated sugar, evaporated milk, and butter.
- Heat the mixture over medium heat, stirring continuously, until it thickens (this typically takes about 12 minutes). The mixture will come to a gentle rolling boil; continue stirring vigorously during this time to prevent scorching and ensure it thickens properly.
- Once the frosting mixture has reached your desired thickness, remove it from the heat. Stir in the sweetened flaked coconut and chopped pecans until evenly distributed.
- Allow the German chocolate frosting to cool completely to room temperature. This step is crucial to ensure it sets properly and doesn’t melt the cheesecake layer.
- Once cooled, spoon several generous dollops of the frosting onto the top of each chilled cheesecake serving.
Notes
Store any remaining frosting in the refrigerator for future use. It makes a delicious topping for ice cream or other desserts!
