Frequently Asked Questions About Apple Fritters
Let’s address some common queries you might have when embarking on your apple fritter-making adventure:
What are the Best Apples to Use for Fritters?
For apple fritters, you want apples that hold their shape well when cooked and offer a good balance of sweetness and tartness. Granny Smith apples are a popular choice due to their firm texture and tartness, which contrasts beautifully with the sweet dough and glaze. Honeycrisp, Fuji, Gala, or Braeburn are also excellent options, as they remain somewhat firm and contribute a lovely sweet-tart flavor. Avoid overly soft or mealy apple varieties, as they tend to turn mushy during the cooking process.
Can I Use Canned Apple Filling for This Recipe?
While I haven’t personally tested this recipe with canned apple filling, I would advise caution. Canned fillings are typically very moist and might cause the dough to become too wet or break apart during frying. If you decide to experiment, I recommend thoroughly draining the canned filling to remove as much excess liquid as possible. You might also want to lightly cook it down on the stovetop to reduce moisture further, ensuring it doesn’t compromise the fritter’s texture.
Can This Recipe Be Made with Other Types of Fruit?
Absolutely! The beauty of fritters is their versatility. You can certainly adapt this recipe to include other fruits. Blueberry fritters are a common and delicious variation, and I can imagine peach, pear, or mixed berry fritters being equally delightful. The key, regardless of the fruit you choose, is to pre-cook it slightly to extract and evaporate a significant amount of its natural liquid. This step is crucial to prevent the dough from becoming soggy and to ensure the fritters fry up beautifully with a light, crisp texture.
How Many Servings Does This Recipe Yield?
This recipe typically makes approximately 20 apple fritters. The exact count can vary slightly depending on how large or small you shape each individual fritter. This generous yield makes it perfect for feeding a hungry family throughout a cozy weekend, or for serving a crowd when entertaining guests during the holidays. They’re always a hit!

Can I Double This Recipe?
You can definitely double this recipe if you’re planning a large gathering or simply want extra fritters to enjoy! However, be mindful that the dough quantity will be quite substantial and might exceed the capacity of a standard stand mixer bowl. If you have a larger capacity mixer, or if you’re able to use two mixers simultaneously, doubling the recipe will be a breeze. Alternatively, you can always make two separate batches to ensure proper mixing and rising. Trust me, these fritters are so good that you’ll absolutely want a generous supply!
Old Fashioned Apple Fritters: A Timeless Treat

There’s something inherently charming and comforting about an old-fashioned apple fritter. It evokes images of simpler times, of warm kitchens filled with the scent of cinnamon and baking apples. This recipe strives to capture that classic essence, ensuring each fritter delivers the nostalgic taste and texture you remember (or will come to love!). It’s a testament to timeless baking, where simple ingredients transform into extraordinary flavors. The irregular shapes and rustic charm are part of what makes them so appealing and truly homemade.
Crafting Your Homemade Apple Fritters: Step-by-Step Guide
How to Make Homemade Apple Fritter Dough:
The foundation of any great fritter is a well-prepared dough. This recipe uses an enriched yeast dough that results in a light and fluffy interior.
- In a large mixer bowl, combine the warm water (around 115°F is ideal for activating yeast), room-temperature buttermilk, granulated sugar, melted and slightly cooled butter, and dry active yeast. Stir these ingredients gently until well combined. Allow the mixture to sit for approximately 15 minutes, giving the yeast time to proof. You’ll know it’s ready when the mixture looks puffed and frothy on the surface. This indicates that the yeast is active and alive, essential for a good rise.
- Next, add the room-temperature eggs, salt, all-purpose flour, and cinnamon to the bowl. Using a dough hook attachment on your mixer, begin to mix slowly until the flour is fully incorporated and a shaggy dough forms.
- Increase the mixer speed to medium-low and continue to mix and knead the dough for a full 10 minutes. This kneading process is vital for developing the gluten in the flour, which will give your fritters their characteristic chewiness and elasticity.
- Once adequately mixed, turn off the mixer and let the dough rest in the bowl for about 10 minutes. This brief resting period helps the gluten relax, making the dough easier to handle. Use this time to prepare your apple filling and preheat your oven (if needed for rising environment or other fall baking, though these are fried).
How to Make Homemade Apple Fritter Filling:
The heart of your fritters is this delicious, caramelized apple filling. Cooking the apples properly is key to preventing soggy fritters.
- Begin by peeling, coring, and chopping your apples into small, uniform pieces. Aim for about ½-inch cubes so they cook evenly and distribute well throughout the dough.
- Place a large saucepan over medium heat and add the unsalted butter, allowing it to melt completely.
- Add the brown sugar to the melted butter and stir constantly until the sugar melts and forms a syrupy mixture.
- Now, add the chopped apples to the saucepan, along with the cinnamon, vanilla extract, a pinch of salt, and the apple cider vinegar (or lemon juice). The vinegar or lemon juice helps to brighten the apple flavor and provides a slight tang that balances the sweetness.
- Cook the apples, stirring occasionally, for 15-20 minutes, or until they are golden brown, caramelized, and almost all of the liquid has evaporated from the pan. This step is critical; reducing the moisture ensures your fritters aren’t waterlogged. The apples should be tender but still hold their shape.
- Once cooked, scrape the apples into a shallow pan or bowl and refrigerate them. It’s important that the filling is at room temperature or cooler before you incorporate it into the dough. This prevents the dough from heating up too much and altering its texture.
How to Assemble Homemade Apple Fritters:
This unique folding technique ensures a delightful distribution of apple pieces throughout your fritters.
- Lightly dust your clean work surface with all-purpose flour. Turn the rested dough out onto the floured surface.
- Using a rolling pin, roll the dough into a thin, rectangular layer, aiming for about 1/2-inch thick.
- Spread half of your cooled apple filling evenly over one half of the rolled-out dough rectangle.
- Carefully fold the other half of the dough over the apple-covered portion, gently pressing down to seal the apples within the dough.
- Rotate the dough and press it out again into a thin rectangle. You may need to sprinkle more flour on your work surface or rolling pin as necessary to prevent sticking.
- Now, spread the remaining apple filling over half of this new rectangle, and fold the dough over itself once more. This repeated folding process is a trick to randomly distribute the apple pieces throughout the dough layers, giving each fritter a wonderful apple-filled bite.
- Gently pat the dough back into a thin, manageable rectangle, approximately 1/2-inch thick again.
- Using a bench scraper or a large, sharp knife, cut the dough into small squares, about 1½ inches per side. Line two baking sheets with parchment paper in preparation.
- Gather together about 4-5 of these small dough squares. Gently press them together into a patty, pinching them lightly at the top to help secure their shape. Don’t worry if they look rustic, odd-shaped, or if some apple pieces poke out – that’s part of the charm of homemade fritters! Each patty should weigh roughly 2.5-3 ounces.
- Place each formed fritter onto a prepared baking sheet. Repeat this process until all your dough squares have been transformed into fritters.
- Loosely cover the fritters with a clean cloth and allow them to rise in a warm place for about 30 minutes. This final rise will make them light and airy once fried.
How to Fry Homemade Apple Fritters:
Frying requires attention to detail, especially regarding oil temperature, to achieve perfectly golden and cooked fritters.
- Towards the end of the fritter rise time, begin preheating your frying oil. Pour about 1½ quarts of canola oil into a medium-large, heavy-bottomed saucepan or a deep pot. Insert a deep-fry thermometer into the oil, ensuring it doesn’t touch the bottom of the pan.
- Turn the heat to medium and allow the oil to gradually heat until it reaches a consistent temperature of 350°F (175°C).
- Throughout the entire frying process, it is crucial to keep a close eye on your deep-fry thermometer and carefully monitor the oil temperature. Maintaining a consistent temperature is key to evenly cooked fritters that are golden brown without being greasy or burnt. If the oil gets too hot, reduce the heat; if it drops too low, increase it slightly.
- Carefully place 2-3 fritters at a time into the hot oil, ensuring you don’t overcrowd the pan, as this can lower the oil temperature too quickly. Fry the fritters for 1-2 minutes per side, or until they are puffed, beautifully golden brown, and cooked through.
- Once cooked, use a slotted spoon or spider to remove the fritters from the oil. Immediately transfer them to a wire rack lined with paper towels to drain any excess oil. This helps them stay crisp.
- Repeat the frying process with the remaining fritters, always remembering to adjust the heat as needed to maintain that ideal oil temperature.
How to Make Homemade Apple Fritter Glaze:
A simple yet irresistible glaze is the perfect finishing touch for your warm apple fritters.
- In a medium bowl, whisk together all the glaze ingredients: powdered sugar, vanilla extract, and milk.
- Continue whisking until you achieve a smooth, pourable consistency. If the glaze is too thick, add a tiny bit more milk; if it’s too thin, add a little more powdered sugar until it reaches your desired consistency.
- Drizzle the warm fritters generously with the glaze, or for a more even coating, you can dip each fritter into the glaze using tongs, ensuring both sides are coated. Place them back on the wire rack to allow the glaze to set slightly.

Best Practices for Storing Leftover Apple Fritters
To keep your homemade apple fritters fresh and prevent them from becoming soggy, proper storage is key. I’ve found that the best method is to store any extra fritters in a paper bag at room temperature. This is similar to how you might store donuts from a bakery, allowing for air circulation and preventing moisture buildup. Airtight containers, while seemingly logical, often trap humidity, causing the fritters to “sweat” and lose their desirable crisp exterior, resulting in a soggy texture. Enjoy them within a day or two for the best quality.
