Ingredients

  • 24 ounces frozen blackberries thawed and patted dry
  • 1 box french vanilla cake mix
  • 16 ounces clear soda such as Sprite or 7-up

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175°C).
  • Lightly spray a 9×13-inch baking dish with non-stick cooking spray, ensuring full coverage.
  • Spread the thawed and patted-dry blackberries in an even layer across the bottom of the prepared dish.
  • Evenly sprinkle the dry French vanilla cake mix over the entire surface of the berries. Do not mix.
  • Carefully and slowly pour the clear soda over the top of the dry cake mix. Ensure that you moisten nearly all of the cake mix; this liquid will absorb and help form your delicious crust.
  • IMPORTANT: DO NOT STIR! Stirring will blend the ingredients too much, resulting in a cake-like top rather than the desired crisp, cobbler crust.
  • Bake for 45-60 minutes. Keep a close eye on the cobbler after the 45-minute mark to ensure the top browns nicely without burning. Baking times can vary by oven, so adjust as needed. For an extra golden-brown top, you can broil for a couple of minutes at the very end, watching carefully to prevent burning.
  • Remove from the oven and allow to cool slightly before serving. We love ours warm with a generous scoop of vanilla ice cream or a dollop of whipped cream on top. Enjoy!
