What is the Ideal Softness for My Butter?

When we talk about “softened butter,” it’s important to hit the right consistency. It should absolutely not be so soft that it’s greasy or nearly melted, as this will prevent the dough from coming together properly and impact the final texture of your cookies. The butter should still be cool to the touch, almost at room temperature – definitely not hard as a rock and difficult to blend with the sugar.

I can almost guarantee that these delicious cookies will be gone in a flash, so a double batch is often a smart move!

  • Ensure Proper Butter Consistency: For the dough to have the ideal consistency and for proper aeration during creaming, make sure your butter is truly at room temperature. It should be pliable and leave an indentation when pressed, but not be melted or greasy.
  • Butter & Margarine Blend for Texture: The original recipe uniquely uses both butter and margarine. This combination helps the cookies hold together beautifully with a slightly cakey yet super buttery interior. While you can use all butter, be aware that the cookies might spread a bit more during baking, affecting their final thickness.
  • Enhance Visual Appeal with Extra Toppings: For that “bakery-style” look, gently press extra M&M’s and even more chocolate chips onto the tops of the cookies immediately after they come out of the oven. The residual heat will slightly melt them, creating a beautiful, tempting finish.
  • Avoid Overbaking for Chewy Centers: Do not overbake these cookies! They will continue to set and firm up as they cool on the baking sheet. HOW TO MAKE Santa’s Favorite Chocolate Chip Cookies: Step-by-Step

 

  1. In the bowl of a stand mixer, beat together the room temperature butter, margarine, packed brown sugar, and granulated sugar until the mixture is light and fluffy. This typically takes 2-3 minutes on medium speed.
  2. Add in the large egg and vanilla extract, then continue to beat until they are thoroughly incorporated and the mixture is smooth.
  3. Gradually add the all-purpose flour, instant vanilla pudding powder (just the dry mix, do not prepare the pudding), baking soda, and salt. Start by slowly stirring to combine the dry ingredients without creating a cloud of flour, then beat on low speed until all ingredients are completely incorporated into a cohesive dough.
  4. Slowly stir in the semi-sweet chocolate chips until they are evenly distributed throughout the dough.
  5. Gently fold in half of the festive red and green M&M’s by hand.
  6. Remove the beater, cover the bowl tightly with plastic wrap, and refrigerate the dough overnight (or for at least 8 hours). This chilling period is crucial for flavor and texture.
  7. The next day, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  8. Remove the chilled dough from the refrigerator. It will be quite firm. Roll the dough into uniform balls, approximately 2 tablespoons in size.
  9. Place the dough balls onto a baking sheet lined with parchment paper, spaced a few inches apart.
  10. Bake the cookies for 9-12 minutes. Ovens vary, so watch them closely. Mine are usually perfect at 11 minutes – the edges should be lightly golden, and the centers should still look slightly soft.
  11. As soon as the cookies come out of the oven, immediately and gently press a few extra white chocolate chips and M&M’s onto the top of each warm cookie for an enhanced visual appeal.
  12. Leave the freshly baked cookies on the hot baking sheet for 5-10 minutes to cool and set slightly before transferring them to a wire rack to cool completely.
  13. Always start with a cold cookie sheet for each subsequent batch to ensure that the cookies bake consistently and prevent excessive spreading.
  14. Once completely cooled, store the cookies in an airtight container at room temperature to maintain their softness and freshness for up to 3-5 days.

Should I Use Salted or Unsalted Butter for These Cookies?

I personally use whatever type of butter I happen to have on hand at the moment, and the cookies always turn out wonderfully. However, if you are mindful of your sodium intake, it’s generally recommended to stick with unsalted butter for these cookies, as it gives you more control over the overall salt content of the recipe.

I originally developed this recipe using unsalted butter. But, I’ve since tried it with salted butter on many occasions and genuinely liked the results just the same. So feel free to use your preference!

How Can I Achieve Thicker Chocolate Chip Cookies?

If your goal is to bake larger, gloriously thicker cookies, the key lies in the initial shaping of the dough. I recommend making the size of your dough balls more substantial before baking. Aim for at least 2 tablespoons (or even more!) of dough per cookie, which should yield a ball larger than a standard golf ball. This increased size allows the cookies to spread more slowly in the oven and helps them retain their shape better, ultimately resulting in a delightfully thicker and chewier cookie overall.

How to Soften Butter to Room Temperature Quickly and Effectively

First Method: The Patient Approach

The simplest way to soften butter (and any other ingredients that require room temperature) is to plan ahead. Take your butter out of the refrigerator and leave it on the counter for about 30 minutes to an hour while you gather and prep all your other ingredients for baking. I typically start by pulling everything I need out onto the counter, ensuring I have all necessary items before I’m midway through a recipe and realize I’m out of something. This method is the least risky for maintaining butter integrity.

However, sometimes it’s winter, and 30 minutes isn’t quite enough time for ingredients to warm up adequately. Or, let’s be honest, sometimes I’m just not that organized to plan so far ahead! It happens to the best of us. So, for those times, I have a couple of other handy tricks up my sleeve.

Second Method: The Microwave Trick (Use with Caution!)

For a quicker solution, I carefully place the butter, still wrapped in its paper (do NOT do this if it’s wrapped in foil!), into the microwave. I then microwave it for precisely 2 seconds, flip it over, go another 2 seconds, flip again, and continue this process, adding 2 seconds on each side. This methodical approach is usually enough to get it perfectly softened. Sometimes, I even stop before the full rotation if it feels soft enough to the touch. It’s absolutely crucial to take extreme care when using this method – overly softened or partially melted butter from the microwave WILL significantly alter the end result of your recipe, potentially leading to flat or greasy cookies. Don’t overdo it!

Third Method: The Warm Water Bath

My third tried-and-true method is to place the wrapped butter sticks into a zip-top bag (to protect it from water) and then submerge the bag in a bowl of warm (not hot!) water. I often use this trick for eggs as well. If the water is warm, but not scalding, this can be THE perfect way to quickly achieve genuinely “room-temperature” ingredients without any risk of melting or cooking them. It’s a gentle and effective solution for when time is of the essence.

  • ¼ cup granulated sugar

  • 3.4 ounces instant vanilla pudding 1 box (not cook & serve) – Just the powder – don’t prepare the pudding
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup semi-sweet chocolate chips or milk chocolate
  • 1 cup white chocolate chips
  • cups M&M’s holiday red and green – divided

Instructions

  • In the mixer bowl – beat the butter, margarine, brown sugar, and granulated sugar together until fluffy and light in color, typically for 2-3 minutes.
  • Add the egg and vanilla extract to the mixture – beat well until thoroughly combined.
  • Incorporate the all-purpose flour, instant vanilla pudding powder, baking soda, and salt. Begin by slowly stirring to prevent flour from flying, then beat on low speed until all ingredients are completely mixed and form a cohesive dough.
  • Slowly stir in the semi-sweet chocolate chips until they are evenly distributed throughout the dough.
  • Gently fold in ½ of the M&M’s by hand.
  • Remove the beater from the mixer, cover the bowl tightly, and refrigerate the dough overnight (or for a minimum of 8 hours). Do not skip this essential step for optimal texture and flavor.
  • The next day, preheat your oven to 350 degrees Fahrenheit (175°C).
  • Remove the chilled dough from the refrigerator. It will be quite firm and stiff. Roll the dough into uniform balls, about 2 tablespoons each.
  • Place the dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart, and bake the cookies for 9-12 minutes. (In my oven, they are consistently perfect at 11 minutes.)
  • Remove the baking sheet from the oven and immediately top each warm cookie with a few extra white chocolate chips and M&M’s before they cool and set completely.
  • Allow the cookies to remain on the hot baking sheet for 5-10 minutes to finish setting before carefully transferring them to a wire rack to cool completely.
  • Always start with a cool or room-temperature cookie sheet for each successive batch to ensure that the cookies bake consistently and prevent premature spreading.
  • Once fully cooled, store the cookies in an airtight container at room temperature to keep them soft and fresh for several days.
