Ingredients
- 3/4 cup warm water (around 115-125 degrees F)
- 2-1/4 tsp active dry instant yeast
- 1/2 tsp granulated sugar (for yeast activation)
- 1/3 cup granulated sugar (remaining)
- 2 large eggs
- 1-1/2 tsp table salt
- 6 tbsp unsalted butter, semi-melted
- 1 cup mashed sweet potato, cooked and unseasoned
- 4-1/2 to 4-3/4 cups all-purpose flour
Instructions
- In a glass measuring cup, combine the active dry instant yeast, 1/2 tsp of granulated sugar, and warm water. Stir gently.
- Allow the yeast mixture to proof for about 5-10 minutes. It should become frothy and bubbly, indicating the yeast is active.
- In a large mixer bowl, combine the remaining 1/3 cup granulated sugar, eggs, table salt, semi-melted unsalted butter, mashed sweet potato, and 4-1/2 cups of all-purpose flour.
- Attach the dough hook to your mixer. Turn the mixer on low speed and slowly pour in the frothy yeast mixture.
- Once all wet ingredients are incorporated, increase the mixer speed to medium-low and mix until the dough comes together and is smooth and elastic. Add more flour (up to 1/4 cup) if the dough is too sticky. Knead for about 5-7 minutes.
- Transfer the dough to a lightly greased bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and place it in a warm area to rise for 90 minutes, or until the dough has doubled in size.
