Essential Ingredients for Your Homemade Masterpiece

Crafting the perfect **Cracker Barrel Chicken and Dumplings** begins with understanding the role of each ingredient. Quality matters, but flexibility is also key.

  • Low-Sodium Chicken Stock or Broth: The foundation of our flavorful broth. Opting for low-sodium allows you to control the seasoning precisely. While store-bought works wonderfully, a homemade chicken broth will undoubtedly elevate the depth of flavor. If time permits, making a large batch from a whole chicken (minus the neck and gizzards) is highly recommended for an unparalleled taste. For a seasonal twist, consider using turkey broth and meat around Thanksgiving for a magical alternative. Chicken bouillon cubes can also be used in a pinch, dissolved in water according to package directions.
  • Boneless, Skinless Chicken Breasts: These provide tender, lean protein. For a significant time-saver, pre-cooked rotisserie chicken is an excellent choice, reducing total cooking time to about 30 minutes and offering a fantastic way to utilize leftovers. You can also use boneless, skinless chicken thighs for a richer flavor, though they may require a slightly longer cooking time to become pull-apart tender.
  • Celery Stalks: An aromatic vegetable that contributes a subtle, earthy flavor and delightful texture to the broth. Ensure they are fresh for the best results.
  • An Onion, Peeled but Left Whole: Essential for infusing the broth with a sweet, pungent aroma and foundational flavor. Keeping it whole allows for easy removal after cooking, as it primarily serves to flavor the stock.

Traditionally, a classic flavor base, or “mirepoix,” for many savory dishes includes celery, onion, and carrots. While carrots were omitted from the original recipe for a specific flavor profile, feel free to reintroduce them (baby carrots are a convenient option) for an added layer of sweetness and nutrition. I typically add minimal salt and black pepper to the dish, finding that the combined flavors are sufficient. However, if you enjoy a hint of heat, a pinch of chili flakes can provide a delightful spice kick.

The Secret to Fluffy Homemade Dumpling Dough

The dumplings are the star alongside the chicken, and making them from scratch is surprisingly simple, yielding an incredibly light and airy texture.

  • All-Purpose Flour: The primary structural component of the dumplings. Keep a little extra on hand for dusting your work surface and the dough to prevent sticking.
  • Buttermilk: This is the crucial ingredient that lends these dumplings their signature fluffiness and light, tender texture. Its acidity reacts with the baking powder, creating air pockets that result in a wonderfully soft bite.
  • Baking Powder: A leavening agent that works with the buttermilk to give the dumplings their rise, making them airy and soft.
  • Salt: Enhances the overall flavor of the dumplings, ensuring they are not bland.

For those seeking an even quicker shortcut, you can achieve delicious **Cracker Barrel style chicken dumplings** by simply using regular canned biscuits. Just cut them into quarters and drop them into the simmering broth. While the texture will be slightly different, it offers a fantastic and convenient alternative for a busy evening.

Essential Kitchen Equipment

Gathering your tools before you start cooking ensures a smooth and enjoyable process.

  • Large Stock Pot: Crucial for cooking both the chicken and the dumplings, allowing ample space for the ingredients to simmer and the broth to thicken without overflowing. A heavy-bottomed pot is ideal for even heat distribution.
  • A Sharp Knife, Pizza Cutter, or Pastry Cutter: Any of these tools will work perfectly for smoothly cutting the dumpling dough into uniform squares. A sharp edge is key for clean cuts.
  • Mixing Bowl: For combining the dumpling dough ingredients. A medium to large bowl will give you enough space to work the dough comfortably.
  • Rolling Pin: To roll out the dumpling dough evenly to the desired thickness.
  • Measuring Cups and Spoons: For accurate ingredient measurements, ensuring consistent results every time.
  • Slotted Spoon or Tongs: Useful for carefully transferring chicken and dumplings.

How To Make These Homemade Chicken and Dumplings

This recipe is designed to be foolproof, guiding you through a few very simple yet crucial steps. We’ll begin by creating the aromatic broth and cooking the chicken, then prepare our wonderfully fluffy dumplings, and finally, combine all these delicious elements into one comforting pot. The process is straightforward, ensuring a fantastic result even for novice cooks.

Step 1: Preparing the Flavorful Chicken and Broth

The heart of this dish is its rich broth and tender chicken. This initial step builds the foundational flavors.

  1. Simmer the Base: In a large stock pot, combine the chicken stock, boneless skinless chicken breasts, celery stalks, and the whole peeled onion. Bring this mixture to a rolling boil over high heat.
  2. Gentle Cook: Once boiling, reduce the heat to low, cover the pot, and allow it to simmer gently for about 20 minutes. This ensures the chicken cooks through and the aromatics infuse the broth with their delicious essence.
  3. Remove Chicken: Carefully remove the cooked chicken breasts from the pot and set them aside to cool slightly.
  4. Flavor Extraction: Discard the cooked onion and celery. While optional, this step is common in many restaurant preparations, as their primary role was to flavor the broth.
  5. Preserve the Broth: Crucially, DO NOT DISCARD the flavorful cooking liquid. Leave it simmering gently over low heat on the stove. This liquid will become the thick, savory sauce for your dumplings, packed with delicious chicken flavor.

Step 2: Crafting Fluffy Homemade Dumplings

These flat, tender dumplings are what make this dish truly special. Their simplicity belies their incredible texture.

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  2. Add Buttermilk: Gradually add the buttermilk to the dry ingredients. Use a fork or your hands to gently work the ingredients together until a soft, shaggy dough forms. Be careful not to overmix, as this can lead to tough dumplings.
  3. Adjust Consistency: If the dough appears too dry, add a tiny bit more buttermilk, a tablespoon at a time. If it’s too wet and sticky, incorporate a little more flour until it’s manageable. The goal is a soft, pliable dough.
  4. Flour and Roll: Once the dough comes together, dust your work surface generously with flour. Transfer the dough to the floured surface and dust the top of the dough with more flour. Using a rolling pin, roll the dough out thinly, aiming for approximately 1/4 inch thick. The thinner the dough, the more delicate your dumplings will be.
  5. Cut into Squares: Using a sharp knife, pizza cutter, or pastry cutter, slice the rolled dough into uniform squares, roughly 1 to 1.5 inches in size.
  6. Optional Rest: If you have an extra 30 minutes, letting the dumpling squares rest on a piece of parchment paper allows the gluten to relax, which can contribute to a more tender dumpling.
  7. Cook the Dumplings: Gently add the squares of dough one by one to the simmering chicken stock. This prevents them from clumping together. Stir gently but frequently after adding a few dumplings to ensure they don’t stick to the bottom of the pot or to each other.
  8. Thicken and Cook: Allow the dumplings to cook in the simmering broth for another 20 minutes. During this time, the starch from the flour in the dumplings will naturally thicken the stock, creating that rich, creamy sauce. Ensure the heat remains low to prevent rapid boiling, which can break apart the delicate dumplings.

Step 3: Bringing It All Together

The final step combines the tender chicken with the fluffy dumplings and thickened broth, completing your comforting meal.

Once the cooked chicken breasts have cooled slightly, use two forks to shred the chicken into bite-sized pieces. Alternatively, you can finely chop it. Once the sauce has visibly thickened and the dumplings are cooked through and tender, add the shredded chicken back into the pot with the cooked dumplings. Stir gently to combine all the delicious components. Allow everything to heat through for a few minutes, ensuring all flavors meld perfectly before serving.

Delightful Serving Suggestions

This **Copycat Cracker Barrel Chicken and Dumplings** is a complete meal on its own, but pairing it with classic Southern sides truly elevates the dining experience. Serve it warm, perhaps garnished with a sprinkle of fresh chopped parsley for a touch of color and fresh herb flavor.

  • Crisp Green Beans: Steamed or sautéed green beans provide a lovely textural contrast and a fresh, vibrant element to balance the rich chicken and dumplings.
  • Creamy Mashed Potatoes: For the ultimate comfort food feast, a side of buttery mashed potatoes is an irresistible choice, perfect for soaking up any extra broth.
  • Hearty Vegetable Casserole: A baked vegetable casserole, perhaps with a cheesy topping, adds another layer of flavor and heartiness.
  • Fluffy Cornbread: A warm slice of cornbread is fantastic for dipping into the savory broth.
  • Simple Side Salad: A light, crisp green salad with a vinaigrette dressing can offer a refreshing counterpoint to the richness of the main dish.

These pairings make for a truly classic, creamy comfort food experience for the whole family, reminiscent of a Sunday dinner at your favorite Southern restaurant.

Slow Cooker Method for Effortless Comfort

For those days when you need a truly hands-off approach, the slow cooker is your best friend. It excels at yielding incredibly moist and tender chicken with minimal effort.

You’ll still follow the same steps to make the homemade dumpling dough, rolling and cutting it into squares as instructed.

  • Enhance Aromatics: For an even deeper flavor, I highly recommend quickly sautéing the chopped onion and celery in a skillet for a few minutes before adding them to the slow cooker. This step, known as sweating the vegetables, helps to enhance their natural sweetness and aromatic qualities.
  • Combine Ingredients: Load all ingredients into your slow cooker except for the dumplings. This includes your chicken stock, chicken breasts, and sautéed aromatics.
  • Cook Low and Slow: Cook on high for 4-6 hours or on low for 6-8 hours. The longer cooking time ensures the chicken becomes incredibly tender and the flavors fully meld.
  • Add Dumplings: Approximately one hour before the end of the cooking time, if you are using store-bought quartered biscuits, add them to the slow cooker. If you’re using my homemade dumpling recipe, add them a bit later, as they typically require less time to cook through. Shred the chicken before serving.

Instant Pot Method for Rapid Deliciousness

When time is of the essence, the Instant Pot is a game-changer, allowing you to whip up this comforting dish in a fraction of the traditional time.

  1. Pressure Cook Chicken & Broth: First, combine your chicken (chopping it into smaller pieces will ensure it cooks more thoroughly and quickly under pressure), broth, and aromatics (celery, onion) in the Instant Pot. Cook on high pressure for just 3 minutes.
  2. Quick Release: Once cooking is complete, perform a quick pressure release according to your Instant Pot’s instructions.
  3. Prepare Dumplings: While the chicken is cooking, prepare your homemade dumpling dough by rolling and cutting it as outlined in the main recipe steps. The dumpling preparation remains consistent regardless of the cooking method.
  4. Remove and Add Dumplings: Carefully remove the cooked chicken and vegetables from the pot. Then, add your fresh dumpling squares to the hot liquid.
  5. Sauté Dumplings: Set your Instant Pot to the “Sauté” function and cook the dumplings for approximately 15 minutes, stirring occasionally to prevent sticking and ensure even cooking. This allows the dumplings to cook and the broth to thicken. Once the dumplings are tender, release any remaining pressure.
  6. Combine and Serve: Shred the cooked chicken and add it back to the pot with the dumplings. Stir gently and let all components rest together for a few minutes to marry the flavors. Your delicious **Instant Pot Cracker Barrel Chicken and Dumplings** are ready to serve!

How To Make Homemade Chicken Broth for Chicken and Dumplings

Creating your own chicken broth at home adds an incredible depth of flavor that store-bought versions simply can’t match. It’s surprisingly simple and elevates this **chicken and dumplings** recipe to new heights.

  • Prepare the Chicken: Begin with a whole chicken (ensuring the giblets and neck are removed). Place the chicken in a very large stock pot or slow cooker.
  • Add Aromatics: Roughly chop large chunks of onions, celery, and optionally, carrots. Add these vegetables around the chicken in the pot.
  • Cover with Water: Pour cold water over the chicken and vegetables until the entire chicken is fully submerged. Starting with cold water helps to slowly extract the flavors and collagen from the chicken, resulting in a richer broth.
  • Simmer to Perfection: Bring the water to a boil over high heat, then immediately reduce the heat to a gentle simmer. Allow it to cook uncovered for 2-3 hours. During this time, you may need to skim any foam or impurities that rise to the surface.
  • Separate Components: Once the chicken is incredibly soft and practically falling off the bones, carefully remove it from the pot. Set the chicken aside to cool before shredding for your dumplings. Discard the cooked vegetables, as their flavor has now been imparted to the broth.
  • Strain the Broth: For a clear, clean broth, strain the liquid through a fine-mesh sieve or a colander lined with cheesecloth. This removes any small bits of bone, skin, or vegetable residue.
  • Ready for Use: Your homemade chicken broth is now ready to be used immediately in your **chicken and dumplings** recipe or can be stored for later use. This deeply flavored broth will make a noticeable difference in the final taste of your dish.

Storage and Make-Ahead Tips

This **Copycat Cracker Barrel Chicken and Dumplings** recipe is so delicious, you might not have many leftovers! But if you do, or if you plan to make it ahead, here’s how to properly store and enjoy it later.

  • Refrigeration: First, allow the dish to cool completely to room temperature. Transfer any leftover chicken and dumplings to an airtight container. It will keep fresh in the refrigerator for up to 3 days.
  • Reheating: To reheat, gently warm the dish in the microwave or on the stovetop in a medium saucepan over low heat. If the sauce has thickened too much during storage, you can add a splash of extra chicken broth or water to reach your desired consistency.
  • Freezing Cooked Dish: For longer storage, freeze cooled chicken and dumplings in a freezer-safe container for up to 3 months. When ready to enjoy, thaw overnight in the refrigerator and then reheat as instructed above. Again, you might want to add a bit more broth if it appears too dry after thawing and reheating.
  • Make-Ahead Dumplings: This recipe is fantastic for meal prepping. You can make a large batch of the dumpling dough ahead of time and freeze the uncooked squares. Arrange them on a parchment-lined baking sheet and freeze until solid, then transfer to a freezer bag. They can be stored for up to 3 months. To cook, simply add them directly from frozen to your simmering broth, adjusting cooking time slightly if needed.
  • Freezing Dough: You can also prepare the dumpling dough and wrap it tightly in plastic wrap, then place it in a freezer bag. Freeze for up to 3 months. Thaw overnight in the refrigerator before rolling and cutting when you’re ready to cook. This head start makes preparing this delicious dinner even easier on a busy day.

Exciting Variations to Customize Your Dish

While the classic **Cracker Barrel Chicken and Dumplings** is perfect as is, don’t hesitate to experiment with these variations to tailor the recipe to your taste or dietary needs.

  • Creamier Broth: For an even richer and creamier chicken and dumplings, consider stirring in a splash of milk, heavy cream, or evaporated milk towards the end of the cooking process. This adds a luxurious texture and mouthfeel. However, remember not to substitute buttermilk with regular milk in the dumpling dough itself, as buttermilk is essential for that signature fluffy texture.
  • Old-Fashioned Dumplings: Traditional Southern dumplings sometimes incorporate shortening or a combination of milk and butter instead of buttermilk. While these yield a denser dumpling, I find that buttermilk consistently provides the best, lightest texture for this recipe.
  • A Touch of Tang: For a bright, subtle tang that cuts through the richness, add half a lemon (or a squeeze of lemon juice) to the pot while the broth is simmering. Remove it before adding the dumplings.
  • Self-Rising Flour Option: If you have self-rising flour on hand, you can certainly use it for the dumpling dough. In this case, you can omit the baking powder, as it’s already incorporated into the flour.
  • Add Vegetables: Boost the nutritional content and flavor by adding extra vegetables. Frozen peas, corn, or diced carrots can be cooked directly in the broth alongside the dumplings, or steamed separately and stirred in at the end. The crispness of fresh, lightly cooked vegetables provides a welcome contrast to the creamy chicken and dumplings.
  • Homemade Buttermilk Hack: No buttermilk? No problem! You can easily make your own by adding 1 tablespoon of white vinegar or lemon juice to a measuring cup, then filling the rest of the cup to the 1-cup mark with regular milk. Let it sit for 5-10 minutes until it slightly curdles. Voila, homemade buttermilk!
  • Herbaceous Notes: Experiment with fresh herbs like a sprig of fresh thyme or a bay leaf added to the broth during the initial simmering phase for an added aromatic layer.

Expert Tips and Tricks for a Perfect Copycat Recipe

Achieving restaurant-quality **Cracker Barrel Chicken and Dumplings** at home is easier than you think with these helpful tips and tricks:

  • Don’t Overwork the Dough: When mixing the dumpling dough, whether by hand, with a fork, or a pastry blender, mix just until the ingredients are combined and a soft dough forms. Overworking the dough develops gluten excessively, which can result in tough, chewy dumplings instead of light and fluffy ones.
  • Achieving Ideal Sauce Thickness: The cooking time for the dumplings naturally thickens the broth, thanks to the starch from the flour. If, after the dumplings are cooked, the sauce is still too thin for your liking, you can let it simmer uncovered for a few more minutes to reduce. Conversely, if the sauce becomes too thick, simply add a little more chicken stock or broth, a quarter cup at a time, until you reach your desired consistency.
  • Gentle Simmering is Key: It’s crucial not to let the broth boil vigorously once the dumplings are added. A gentle simmer is ideal. Constant, gentle stirring will prevent the dumplings from sticking to the bottom of the pot or to each other. Rapid boiling can cause the delicate dumplings to break apart or become mushy.
  • Taste and Adjust Seasoning: Always taste your broth before adding the dumplings and again before serving. Adjust salt, pepper, and any other seasonings as needed. Remember that low-sodium broth allows for more control over the final saltiness.
  • Uniform Dumpling Size: Try to cut your dumplings into similar sizes. This ensures they all cook at roughly the same rate, preventing some from being undercooked while others are overcooked.
  • Shredding Chicken: For perfectly shredded chicken, allow the cooked chicken breasts to cool slightly, making them easier to handle. You can use two forks to pull the meat apart or even a stand mixer with a paddle attachment for larger batches.

Popular Questions About Chicken and Dumplings

Let’s address some common questions to help you master this beloved comfort food dish.

What Is The Difference Between Chicken And Dumplings And Chicken And Biscuits?

The distinction primarily lies in the type of “dumpling” used. **Cracker Barrel Chicken and Dumplings** are famous for their flat, thin dumplings, which resemble square-cut noodles. These are usually cooked directly in the savory sauce, absorbing its flavors and contributing to its thickness.

In contrast, “chicken and biscuits” typically feature thicker, chewier, and doughier biscuit-style dumplings. These are often baked on top of a creamy chicken mixture, forming a crust, or served as separate side biscuits. While both are incredibly comforting, the texture and integration of the “dumpling” component within the dish are quite different, offering distinct culinary experiences.

Can I Make Vegan Chicken And Dumplings?

Absolutely! With a few simple substitutions, you can easily create a delicious vegan version of **chicken and dumplings**. Swap the chicken broth with a rich vegetable broth. Instead of chicken, use a plant-based protein alternative like shredded mushrooms, chickpeas, or a store-bought vegan chicken substitute, or simply load up on hearty vegetables like carrots, potatoes, and peas. For the dumplings, replace traditional buttermilk with a homemade vegan buttermilk (lemon juice or apple cider vinegar mixed with almond milk or another plant-based milk and left to curdle for a few minutes). This ensures your dumplings retain their light and fluffy texture.

What Thickens Chicken And Dumplings?

Several elements contribute to the luscious, thick consistency of **chicken and dumplings**.

  • Starch from Dumplings: As the homemade flat dumplings cook in the broth, the flour releases starch, which naturally thickens the liquid over time. This is the primary thickening agent in this specific recipe.
  • Reduction: Simply allowing the broth to simmer for a longer period (uncovered, if you wish to speed it up) will cause some of the liquid to evaporate, resulting in a naturally thicker sauce.
  • Added Creaminess: Incorporating heavy cream, evaporated milk, or even a splash of whole milk towards the end of cooking can add significant body and richness, making the sauce delightfully creamy.
  • Slurries: For a more controlled thickening, a cornstarch slurry (a mixture of cornstarch and cold water) or a flour slurry can be stirred into the simmering broth until it reaches your desired consistency. Be sure to add it gradually and stir continuously to avoid lumps.

Why Did My Chicken And Dumplings Fall Apart?

If your dumplings are disintegrating in the pot, it’s most commonly due to overcooking. Flat dumplings, much like pasta noodles, can become overly soft and mushy if left to simmer for too long. For optimal texture, treat them with care: they typically need around 15-20 minutes to cook through. Start checking for doneness after about 10 minutes by gently pressing one with a spoon; it should be tender but still hold its shape.

If you’re using canned biscuits for your dumplings, undercooked biscuits can also become soggy and mushy. Ensure they have enough time to puff up and cook through in the simmering broth.

Additionally, overly aggressive stirring can cause delicate dumplings to break apart. Stir gently and only as needed to prevent sticking.

Why Are My Chicken And Dumplings Not Fluffy?

The key to light and fluffy dumplings lies primarily in the use of buttermilk and not overmixing the dough. If your chicken dumplings lack that coveted airy, creamy texture, here are the most likely culprits:

  • No Buttermilk: Using regular milk instead of buttermilk in the dough is the biggest reason for dense dumplings. Buttermilk’s acidity reacts with the baking powder, creating gas bubbles that result in a significantly lighter and softer dumpling.
  • Overmixing the Dough: As mentioned before, overworking the dough develops gluten, leading to a tough, elastic texture rather than a tender, fluffy one. Mix just until combined.
  • Incorrect Leavening Agent: Ensure your baking powder is fresh and that you’re using the correct amount. Old baking powder loses its potency.
  • Dough Thickness: Rolling the dough too thick can also result in heavier, less fluffy dumplings. Aim for around 1/4 inch thickness for the traditional “flat” style.
