Salted Caramel Skillet Cookie

What is it about a skillet cookie, or “Pizookie” as it’s often called, that captures hearts and taste buds alike? It’s more than just a large cookie; it’s a dessert that embodies comfort, nostalgia, and a touch of playful extravagance. Baking a cookie in a cast iron skillet creates a unique texture profile that’s hard to replicate with traditional cookies. The edges become wonderfully crisp and golden, while the center remains incredibly soft, gooey, and tender. Served warm, straight from the oven, it transforms into an interactive dessert, a delicious centerpiece that invites everyone to gather round. It eliminates the need for individual servings, encouraging a shared, communal experience that strengthens bonds and creates lasting memories. The ease of preparation, combined with its impressive presentation and universally loved flavor, makes the skillet cookie a go-to choice for any casual gathering or cozy family night.

Key Ingredients and Recommended Equipment

Achieving skillet cookie perfection starts with quality ingredients and the right tools. Here’s what you’ll need to make this outstanding Salted Caramel Skillet Cookie:

  • 10″ Cast Iron Skillet: Essential for that perfect crust and even cooking.
  • Caramel Candies: These melt into pockets of gooey deliciousness throughout the cookie.
  • Semi-Sweet Chocolate Chips: A classic cookie staple that pairs perfectly with caramel.
  • Pure Vanilla Extract: Enhances all the sweet flavors in the cookie.
  • Chocolate Candy Bar (for breaking into pieces): Adds extra pockets of rich, melted chocolate.
  • Coarse Sea Salt: The star ingredient that balances the sweetness with a delightful salty finish.

Beyond these, ensure your butter and eggs are at room temperature for the best emulsion and cookie texture. Using both granulated and light brown sugar contributes to a wonderfully chewy and moist cookie. Don’t forget the flour, cornstarch (for a tender crumb), baking soda, and a touch of table salt for overall flavor balance. Having these components ready will set you up for a smooth and successful baking experience.

  • 1 cup butter – room temperature
  • 1/2 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs – room temperature
  • 2 tsp vanilla extract
  • 2 tbsp milk
  • 2 1/2 cups all-purpose flour – spooned & leveled (not scooped)
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 teaspoon table salt
  • 1 cup semi-sweet chocolate chips
  • 20 caramel squares
  • 1 chocolate candy bar – broken in pieces
  • 2 tsp coarse sea salt

Instructions

  1. Preheat oven to 325°F.
  2. Lightly grease an oven-safe, 10″ cast iron skillet (you must use an oven-safe skillet).
  3. In a mixer bowl with a paddle attachment, beat the butter until smooth and creamy.
  4. Add granulated sugar & brown sugar and beat on medium-high speed until light & fluffy.
  5. Beat in eggs, vanilla & milk on high speed until well mixed.
  6. Scrape down the sides and bottom of the bowl as needed (especially if not using a scraper paddle attachment).
  7. Add flour, cornstarch, baking soda, and table salt on low speed until just combined.
  8. Add the chocolate chips & mix on low speed until evenly distributed.
  9. Transfer half of the cookie dough into the prepared skillet & press down into an even layer.
  10. Evenly distribute half of the broken chocolate bar pieces, caramel squares, & coarse sea salt over the first layer of dough.
  11. Top with the remaining dough, pressing down gently again to cover the filling. Then, scatter the remaining chocolate candy bar pieces, caramel, & salt on top.
  12. Bake for 27-30 minutes, or until the sides are browned and the top is lightly golden brown.
  13. If you prefer a slightly more cooked-through cookie, bake for 35-40 minutes.
  14. Allow the cookie to cool slightly in the pan on a wire rack before serving. This helps it set and makes it easier to scoop.

Baking Tips for Pizookie Perfection

To ensure your Salted Caramel Skillet Cookie turns out perfectly every time, keep these tips in mind. Firstly, always use a cast iron skillet. Its superior heat retention and distribution are key to achieving those coveted crispy edges and a perfectly gooey center. Ensure your butter and eggs are at room temperature; this allows them to cream together smoothly with the sugars, creating a light and airy base for your cookie dough. When adding the dry ingredients, mix just until combined to avoid overworking the gluten, which can lead to a tough cookie. The cornstarch in the recipe is a secret weapon for softness, so don’t omit it! For the caramel, using individually wrapped caramel squares and scattering them throughout the dough ensures pockets of melted, chewy caramel in every bite. And that coarse sea salt? It’s not just a garnish; it’s a flavor enhancer, cutting through the sweetness and elevating the entire experience. When it comes to baking time, keep an eye on the edges—they should be golden brown, and the center may still look slightly soft, which is exactly what you want for that signature gooey Pizookie texture. Remember, it will continue to cook slightly from the residual heat of the skillet after it’s removed from the oven.
