Ingredients

  • 1/2 cup plus 2 tablespoons granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 4 egg yolks
  • 3 cups whole milk
  • 1/2 cup unsalted cold butter, cut into pieces
  • 2 teaspoons vanilla extract
  • 2 cups white chocolate chips
  • candy pieces or berries (optional – I used chocolate rock candy)
  • 18 3 oz. paper cups
  • 18 popsicle wooden sticks

Instructions

  1. In a heavy large saucepan, whisk together the sugar, cornstarch, and salt.
  2. Place the saucepan over medium-high heat.
  3. Immediately add and whisk in the cold milk and egg yolks.
  4. Continue to whisk constantly while the mixture heats up for 10 to 15 minutes.
  5. Once the mixture begins to thicken and bubble, remove the pan from the heat and turn off the burner.
  6. Add the vanilla extract, white chocolate chips, and cold butter pieces, one by one, continuously whisking until everything is fully incorporated and smooth.
  7. Arrange the paper cups onto a flat tray or baking dish for stability.
  8. Spoon the warm custard into each paper cup, filling them about 3/4 full.
  9. If desired, top with your preferred candy pieces or fresh berries.
  10. Finish by carefully poking a wooden popsicle stick into the middle of the custard in each cup.
  11. Freeze for a minimum of 6 hours, or preferably overnight, to ensure they are completely firm.
  12. Before serving, gently tear and peel away the paper cup from the frozen custard.
