Easy Stuffed Chicken Breast for Family Dinners

Welcome to your new favorite weeknight meal! For those of us who constantly seek simple yet delicious solutions for dinner, finding inspiring recipes that don’t demand hours in the kitchen is a true victory. In our home, “easy” is truly king, especially when it comes to family dinner ideas. That’s why I’m thrilled to share a recipe that perfectly embodies this philosophy: a magnificent Cheesy Red Pepper Stuffed Chicken Breast. This dish is not only incredibly flavorful but also surprisingly straightforward to prepare, making it an ideal choice for busy evenings or even when you’re hosting company.

Have you ever watched a cooking show like “Chopped”? It’s genuinely inspiring to see how talented chefs transform a few basic ingredients into something spectacular and unique. That very spirit of culinary creativity, combined with a focus on simplicity, led me to develop this recipe. Starting with just a handful of staple ingredients, I’ve created a dish that’s bursting with flavor and elegance, proving that you don’t need a gourmet kitchen to make an extraordinary meal.

Crafting Culinary Magic: The Cheesy Red Pepper Stuffed Chicken Breast

This particular recipe for Cheesy Red Pepper Stuffed Chicken Breast became an instant family favorite the other night. It was truly one fabulous dinner, showcasing how a few well-chosen components can come together to create a memorable experience. The secret lies in a creamy, savory filling encased within tender chicken, topped with a delightful crispy, cheesy crust.

The Foundation of Flavor: Simple Yet High-Quality Ingredients

To embark on this culinary adventure, I started with a few core ingredients that promise both taste and texture. Boneless, skinless chicken breasts provide a lean canvas perfect for stuffing. The vibrant sweetness of red bell pepper adds a crucial layer of flavor and color. For creaminess and a subtle tang, plain Greek yogurt plays a vital role. And, of course, the star of the show for that irresistible cheesy goodness is Sargento® Chef Blends™ Shredded 6 Cheese Italian. Sargento cheeses are renowned for their quality, always cut from blocks of 100% real, natural cheese, which makes all the difference in the final taste of your dish.

Summary: Tender and juicy Cheesy Red Pepper Stuffed Chicken Breast, perfect for any family meal.

Prep Time: 15 mins

Cook Time: 25 mins

Total Time: 40 mins

Ingredients

  • 6-7 boneless skinless chicken breasts
  • 8 ounces cream cheese – room temperature
  • 1-2 cups Sargento Chef Blends Shredded 6 Cheese Italian – divided
  • 1 red pepper – diced into small pieces
  • 1 cup plain greek yogurt
  • ½ cup parmesan cheese
  • 1 cup bread crumbs
  • 1 tsp garlic powder
  • ½ tsp season salt
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Spray a 9×13 glass baking dish with cooking spray – set aside.
  2. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  3. In a mixer, combine the room temperature cream cheese, 1 cup of the Sargento shredded cheese, and the diced red bell pepper. Beat until well blended and creamy.
  4. In a separate small bowl, combine the plain Greek yogurt and parmesan cheese. Whip together until fully blended – set aside.
  5. Pound each chicken breast with a meat tenderizer until it is evenly flat, about ¼ to ½ inch thick. This helps ensure even cooking and makes rolling easier.
  6. Take each flattened chicken breast and spoon a small amount of the cheese and bell pepper mixture into the center. Carefully roll it up and place it seam-side down in the prepared baking dish. Repeat this process with each chicken breast.
  7. Once all the chicken breasts are stuffed and arranged in the dish, generously spread the Greek yogurt and parmesan cheese mixture evenly over the top of each rolled chicken breast.
  8. Finish by sprinkling the bread crumbs over the yogurt mixture, followed by the garlic powder, seasoned salt, salt, and pepper. This creates a delicious, crispy crust.
  9. Bake in the preheated oven for 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius) as measured with a meat thermometer.
  10. Approximately 5 minutes before the chicken is fully cooked, remove the baking dish from the oven. Sprinkle the remaining Sargento shredded cheese over the chicken and return it to the oven. Continue baking until the cheese is melted, bubbly, and lightly browned, adding a final burst of cheesy flavor.

Notes

To make this recipe in an air fryer: Reduce the recipe by half to ensure all chicken pieces fit in a single layer in your air fryer basket. Pound the chicken breasts very thin, as this will significantly reduce cooking time. Cook at 360 degrees Fahrenheit (180 degrees Celsius) for 6-8 minutes. Then, open the air fryer, add the remaining cheese, and cook for another 4-6 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the cheese is beautifully melted.
