Gluten Free Vegan Cheesecake

Embarking on a new dietary journey can be both exciting and challenging, and that’s precisely where my husband and I find ourselves. We’ve recently decided to explore a semi-vegan lifestyle. This means that throughout the week, our meals are approximately 90% plant-based, with perhaps one or two servings of dairy, like a splash of milk in our coffee or a sprinkle of cheese. On weekends, we allow ourselves one meal that includes meat or poultry. This is still very much an experimental phase for us. As lifelong carnivores, transitioning to a more plant-centric diet is a significant step, and we’re eager to see how it impacts our energy levels, overall well-being, and culinary creativity. The biggest question is whether we’ll genuinely enjoy this new way of eating in the long term.

Given this new dietary exploration, I was absolutely thrilled when my dear friend Tamar, from Random-osity, shared this incredible **Gluten-Free Vegan Cheesecake** recipe! It arrived at the perfect time, offering a guilt-free indulgence that perfectly aligns with our semi-vegan journey. Now, I can enjoy a rich, creamy dessert without compromising our new dietary goals, and I couldn’t wait to share this delightful discovery with all of you.

Hello everyone! It’s a genuine pleasure to be a guest contributor for Gina today, and I’m incredibly excited to present a recipe that’s not only delicious but also caters to specific dietary needs.

My culinary philosophy, especially when blogging about recipes, is deeply rooted in my personal experiences with food allergies. As someone who has sensitivities to gluten, dairy, and soy, every recipe I create and share is naturally free from these common allergens. However, I want to assure you that these restrictions never compromise taste. I am meticulous about testing and refining every dish, ensuring that I only share recipes that I **know** are incredibly flavorful and satisfying. My blogging also often incorporates elements of my Jewish heritage, bringing a unique and meaningful dimension to the dishes I develop, and today’s cheesecake is a wonderful example of this fusion.

Just last week, we observed the joyous holiday of Shavuot. This special occasion commemorates the momentous event of receiving the Torah and the Ten Commandments at Mount Sinai. It’s a holiday rich in tradition, and one of its most cherished customs involves enjoying dairy meals. In Jewish dietary laws, milk and meat are not mixed, and while many holidays are celebrated with elaborate meat-based feasts, Shavuot stands out for its emphasis on dairy. Traditional Shavuot foods often include comforting dishes like blintzes (delicate Jewish crepes), hearty noodle kugels, and, of course, cheesecake.

Funnily enough, even before my dairy allergy developed, I was never a huge fan of traditional cheesecake. However, I’ve long been intrigued by the concept of raw cashew cheesecakes, which have become increasingly popular across the internet. Their promise of a creamy, rich texture without the need for baking, and their naturally dairy-free composition, piqued my curiosity. So, I decided to take the plunge and experiment. My efforts were met with fantastic success, yielding a dessert so remarkably delicious and authentic in texture that I simply had to share it! Could you truly believe that this stunning creation is entirely dairy-free, gluten-free, soy-free, and requires no baking whatsoever? It sounds almost too good to be true.

Well, prepare to feast your eyes, because it is absolutely all of the above!

Gluten Free Vegan Cheesecake

The simplicity of the preparation process for this raw vegan cheesecake was another delightful surprise. I recall attempting a traditional baked cheesecake once, and it was a rather finicky and time-consuming endeavor, requiring precise temperatures and careful handling to prevent cracks. In stark contrast, this vegan version was incredibly straightforward – truly easy-peasy! The beauty of a no-bake recipe is that it removes much of the stress associated with baking, making it accessible even for novice dessert makers. The primary tool you’ll need is a good food processor, which does most of the heavy lifting, transforming simple ingredients into a decadent treat.

Indeed, if you have a food processor, you are well on your way to creating this magnificent vegan cheesecake!

The crust comes together effortlessly, requiring just a few minutes of processing time. The combination of soaked dates, blanched almonds, unsweetened coconut flakes, and a hint of fresh orange zest and juice creates a flavorful, slightly chewy, and perfectly firm base. This provides a wonderful textural contrast to the creamy filling. Once blended, simply press this mixture into a springform pan, and your crust is ready. It’s a wholesome foundation, packed with natural sweetness and healthy fats.

When it comes to the filling, the magic happens with soaked raw cashews. These unassuming nuts, once softened, blend into an incredibly smooth and rich cream, mimicking the texture of traditional cream cheese. Combined with coconut oil for structure, maple syrup for natural sweetness, more unsweetened coconut, vanilla, cinnamon, and a touch of orange juice, the filling achieves a luxurious consistency and a beautifully balanced flavor profile. It’s hard to believe such a decadent dessert can be crafted from such simple, whole ingredients.

You can absolutely justify this as a healthy treat – it’s made with wholesome ingredients like nuts, dates, coconut, a touch of maple syrup, and fresh orange juice, offering natural sweetness and beneficial nutrients.

Gluten Free Vegan Cheesecake

I am genuinely delighted with the outcome of this recipe. Its creamy texture and delicate flavor exceeded all my expectations. Even my primary taste tester, who isn’t typically enthusiastic about healthy food alternatives, gave it a resounding approval – though he playfully refused to label it a “cheesecake,” perhaps out of loyalty to its dairy-laden counterpart! Regardless of the name, the fact that it passed his discerning palate is a testament to its deliciousness. This recipe truly proves that dietary restrictions don’t have to mean sacrificing flavor or satisfaction when it comes to desserts. It’s a fantastic option for anyone seeking a plant-based, gluten-free, or dairy-free sweet treat.

Ingredients

Crust ingredients:

  • 1 cup dates (soaked overnight)
  • 2 cups slivered blanched almonds
  • 1/2 cup unsweetened coconut flakes
  • zest of 1 orange
  • juice of 1/2 an orange

Cheesecake ingredients:

  • 2 cups raw cashews (soaked overnight)
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened coconut flakes
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • juice of 1/2 an orange

Topping ideas:

  • fresh fruit compote
  • whipped topping (vegan coconut cream is excellent!)
  • chocolate drizzle or shavings
  • the possibilities are endless for creative toppings!

Instructions

  1. Soak the dates and cashews, separately, overnight. Drain them thoroughly before use and set aside.
  2. In a food processor or high-speed blender, combine all the crust ingredients. Blend until the mixture is well combined, sticky, and the nuts are finely pulverized. Scrape down the sides of the bowl as needed to ensure even blending.
  3. Firmly press the crust mixture into the bottom of a greased springform pan. Use the back of a spoon or your fingers to create an even layer. Set the pan aside.
  4. Clean your food processor or blender. Add all the cheesecake ingredients (soaked cashews, coconut oil, maple syrup, unsweetened coconut flakes, vanilla, cinnamon, and orange juice). Blend until the mixture is completely smooth and creamy. This may take a few minutes, so be patient and scrape down the sides multiple times to ensure no lumps remain.
  5. Taste the cheesecake mixture and adjust the sweetness to your liking, adding more maple syrup if desired.
  6. Pour the smooth cheesecake filling over the prepared crust in the springform pan. Gently spread it evenly using a spatula or the back of a spoon.
  7. Wrap the springform pan tightly with plastic wrap to prevent freezer burn and place it in the freezer for at least 4-6 hours, or until the cheesecake is firm and fully set.
  8. Once set, remove the cheesecake from the freezer and carefully unmold it from the springform pan. Allow it to sit at room temperature for about 10-15 minutes before slicing, or refrigerate for an hour for easier cutting. Serve with your favorite toppings.
  9. Enjoy every delicious bite!
