This week, I’m thrilled to share a personal favorite: the Grasshopper Ice Cream Cake I recently made for my son’s birthday. This cake was an absolute hit, combining the beloved flavors of mint and chocolate in a cool, creamy dessert that’s surprisingly simple to prepare. Forget the fuss of traditional frosted cakes; this ice cream cake offers a fantastic alternative that’s not only delicious but also incredibly convenient. Its effortless assembly means I might be making these more often than conventional cakes!

Grasshopper Ice Cream Cake Recipe: A Minty Chocolate Dream

Ingredients

  • 1 box cake mix (your preferred flavor, chocolate or vanilla works well to complement mint)
  • Eggs, oil, water according to package instructions (for the cake mix)
  • 1-1.5 quart ice cream (mint chocolate chip is perfect for a Grasshopper cake, but any flavor like vanilla bean or chocolate can be substituted)
  • 1/2 bag chocolate chips (semi-sweet or dark chocolate for best flavor)
  • 1/2 tablespoon shortening (ensures a smooth, pourable chocolate drizzle that hardens nicely)

Instructions

  • Begin by preparing your chosen box cake mix according to the instructions provided on its packaging. This ensures your cake layer will be perfectly moist and flavorful.
  • Pour the prepared batter into a springform pan. A springform pan is ideal for this recipe as it allows for easy removal of the finished cake without damaging its delicate structure.
  • Once baked, allow the cake to cool *completely* on a wire rack. This is a crucial step; attempting to add ice cream to a warm cake will result in a melty mess. Patience here ensures a beautifully layered cake.
  • Carefully remove the cake from the springform pan, ensuring to leave it on the bottom round piece. This base will provide support for the ice cream layers.
  • Using a long, thin knife or a cake leveler, gently remove the domed top portion of the cake to create a flat, even surface. This will ensure your ice cream layer sits perfectly level.
  • Reattach the sides of the springform pan around the flattened cake base. Cover the pan and place it in the freezer until the cake layer is firm, typically about 1 hour.
  • While the cake is chilling, take your chosen ice cream out of the freezer and allow it to thaw just enough so it becomes soft and spreadable, usually 20-30 minutes, depending on your room temperature.
  • Once the cake is firm and the ice cream is soft, begin spreading the ice cream evenly over the top of the cake, smoothing it out as you go. Continue this process until the ice cream layer reaches the top edge of your springform pan. Return the entire pan to the freezer to set completely.
  • When the ice cream layer is firm again, use a warm knife to carefully run along the inner sides of the pan. This helps to loosen the ice cream and cake from the pan, making removal easier. Then, unclip and remove the springform sides from the cake.
  • For the chocolate drizzle, combine your chocolate chips and shortening in a small microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until the mixture is completely melted and smooth.
  • Using a spoon, drizzle the melted chocolate over the top of the frozen ice cream cake in your desired pattern. The cold surface of the cake will cause the chocolate to firm up almost instantly, creating a delightful “magic shell” effect.
  • Return the completed Grasshopper Ice Cream Cake to the freezer until you are ready to serve. This ensures it’s perfectly chilled and firm.
  • Before serving, let the cake sit out at room temperature for about 15 minutes. This allows the cake layer to soften slightly while the ice cream remains firm enough to slice beautifully, ensuring a perfect texture with every bite.
