Making fortune cookies from scratch is an exciting process that yields surprisingly professional results. The key is to work quickly and efficiently once the cookies are out of the oven. Follow these steps for a perfect batch:

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a mixer bowl, combine the egg whites and vanilla extract. Beat with a paddle attachment until the mixture becomes frothy.
  3. In a separate small bowl, sift together the flour, granulated sugar, and a pinch of salt.
  4. Gradually add the sifted flour mixture to the egg mixture, beating until a thick, smooth batter forms.
  5. Prepare a heavily greased cookie sheet or use a silicone baking mat. Take a small amount of batter (about a teaspoon) and drizzle it into a thin puddle. Initially, I tried a Silpat, but found a heavily greased cookie sheet worked even better for crispiness.
  6. Spread the batter into a thin, uniform circle, approximately 3 inches in diameter. Work with only 2-3 cookies at a time, as you’ll need to shape them quickly once they are baked.
  7. Bake for 5 minutes, or until the edges turn golden brown while the center remains pale.

  9. Fold the cookie in half, gently pinching the edges together with one hand.
  10. With your other hand, press into the center of the folded cookie to create its signature bend, then pull the ends down to fully form the fortune cookie shape. This entire shaping process should take no more than 10 seconds per cookie before moving to the next one still hot from the oven.

To ensure your fortunes look crisp and vibrant, I strongly recommend using at least the “normal” print quality setting on your printer, if not the “best” quality. I’ve learned from experience that printing on a “draft” setting results in less-than-ideal quality, with faded colors and blurred text. Adjusting to a higher DPI (dots per inch) setting will significantly improve the appearance of your printable fortunes.

Do I need special paper for these printables?

Unlike many other printables where cardstock is often preferred for durability, for these fortune cookie inserts, regular copy paper is ideal. You want the paper to be thin and easily foldable to fit inside the cookies without causing them to break. Standard copy paper offers the perfect balance of flexibility and strength for this craft.

Ingredients

  

  • 2 egg whites
  • ¼ tsp vanilla extract
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • pinch of salt

Instructions

  • Preheat the oven to 400 degrees.
  • In the mixer bowl, combine the egg whites & vanilla – beating with the paddle attachment until frothy.
  • Sift the flour, sugar & salt in a small bowl.
  • Add the flour mixture to the egg mixture & beat until it forms a thick batter.
  • On a heavily greased or silicone-lined cookie sheet – take a small amount of batter on a teaspoon & drizzle into a puddle. (I first started out with a Silpat – I found that the cookie sheet with heavy cooking spray worked much better)
  • Spread the puddle around until you have a thin circle approx 3 inches in diameter & uniform in thickness. Only do 2-3 at a time as once you pull them out from baking, you will have to work quickly.
  • Bake for 5 minutes or until edges are golden brown & center is still pale.
  • Remove & lift off the first one with a thin, offset spatula – flip upside down onto a cutting board and quickly place the fortune paper in the center.
  • Fold the cookie in half- pinching together & hold with one hand.
  • With the other hand, press into the center to form the bend & pull the ends down to form the cookie. This whole process of folding should take no more than 10 seconds before you move on to the next hot cookie waiting for you.
  • You can hang it over the edge of a glass until it’s hardened or place in a muffin tin to help hold it’s shape.
  • Repeat until all the batter is used up.
  • Store in an airtight container for up to 1 week.
