  • ¼ cup coconut oil
  • ¼ cup creamy peanut butter
  • ¼ cup raw honey
  • 1 cup mix ins – I used a dried fruit blend of raisins cherries & blueberries

Instructions

  • Preheat oven to 350°F (175°C) for conventional or 325°F (160°C) for convection.
  • In a large mixing bowl, combine the oats, granulated sugar, and your chosen mix-ins.
  • In a small saucepan, combine the coconut oil, creamy peanut butter, and raw honey.
  • Heat the mixture over medium heat, stirring constantly, until it’s completely melted and pourable. Be careful not to boil.
  • Remove the saucepan from the heat and immediately pour the warm peanut butter mixture over your dry oat mixture in the large bowl.
  • Toss everything together thoroughly until the oats and mix-ins are evenly coated.
  • Spread the coated granola mixture thinly and evenly onto a baking sheet lined with parchment paper. This ensures even cooking and crispness.
