My Kitchen Adventures: Homemade Raspberry Marmalade
Inspired by the culinary genius of our community, and specifically by Jaymi’s delightful kumquat marmalade recipe from a couple of weeks ago, I embarked on my own preserving adventure. However, a significant citrus allergy in our household meant a delicious deviation was in order. My quest for the perfect homemade spread led me to the vibrant aisles of Costco, where I indulged my delightful obsession with loading my cart with as much fresh produce as humanly possible. This week, it was a mountain of plump, juicy raspberries that called my name. The thought of transforming these ruby-red gems into a luscious, homemade marmalade was simply irresistible, promising a sweet and tangy treat that everyone in our family could enjoy safely.
Soon, the local farmers’ markets will be bustling with an incredible array of seasonal produce, and I can hardly wait to dive headfirst into that abundance of fresh, locally grown ingredients. Imagine the possibilities for new recipes and preserving projects! Until then, these beautiful Costco raspberries provided the perfect canvas for my marmalade-making aspirations. There’s a unique satisfaction that comes from creating something from scratch, especially when it results in such a vibrant and flavorful preserve. This raspberry marmalade embodies that joy, bringing a taste of summer to our table no matter the season.


Homemade Raspberry Marmalade Recipe
Creating homemade marmalade is a rewarding process that yields a vibrant and flavorful spread far superior to store-bought versions. This raspberry marmalade recipe is straightforward and results in a delicious preserve perfect for breakfast, desserts, or even savory pairings. Follow these steps to make your own batch of this delightful fruit spread.
Ingredients
- 2 cups fresh fruit (such as raspberries, hulled if necessary)
- 3 1/2 cups water
- 2 cups granulated sugar
- 1 tsp vanilla extract
Instructions
- Begin by thoroughly washing your chosen fresh fruit. For raspberries, a gentle rinse under cold water is sufficient. If using other fruits, hull or prepare them as needed.
- Place the prepared fruit in a large saucepan along with 3 1/2 cups of water. Cover the pan and let it sit overnight at room temperature. This crucial step allows the fruit to release its natural pectin and juices, which are essential for achieving the perfect marmalade set.
- The next morning, prepare for the cooking and setting test by placing two metal spoons in your freezer. These will be used later to quickly check the consistency of your marmalade.
- Place the saucepan with the fruit and water on the stove over high heat.
- Add the granulated sugar to the fruit mixture, stirring continuously until the sugar is completely dissolved. Continue heating until the mixture reaches a rolling boil.
- Once boiling, stir in the vanilla extract. The vanilla adds a wonderful depth and aromatic sweetness that beautifully complements the bright fruit flavor.
- Maintain a vigorous boil, stirring occasionally, for approximately 45 minutes to 1 hour. This extended boiling time is vital for reducing the liquid, concentrating the flavors, and allowing the pectin to activate and thicken the marmalade.
- After 45 minutes of boiling, retrieve one of your frozen spoons. Carefully place a small amount of the hot marmalade onto the cold spoon and return it to the freezer for exactly 3 minutes.
- Remove the spoon from the freezer. The marmalade on the spoon should now be cooled and slightly set.
- Gently tip the spoon. If the marmalade runs off quickly or appears watery, it needs more time to cook. Return the pan to the boil for another 5 minutes, then repeat the test with your second frozen spoon. The marmalade is cooked to perfection when it forms a soft gel and doesn’t slide off the spoon easily when tipped. It should wrinkle slightly when pushed with your finger.
- Once the marmalade has reached its setting point, turn off the heat and let the pan sit for 5 minutes. This brief resting period allows the fruit pieces to distribute evenly throughout the thickened liquid, preventing them from sinking to the bottom of the jars.
- Carefully pour the hot marmalade into sterilized jars, filling them almost to the brim. Seal them immediately with lids and rings, then refrigerate overnight. For longer-term storage, you may process the sealed jars in a boiling water bath according to standard canning practices.
- This recipe typically yields about 12-15 ounces of delicious raspberry marmalade, perfect for sharing or savoring yourself.
