Ingredients

Crust

  • 2 cups crushed pretzels (about 4 cups whole)
  • ¾ cup unsalted butter, melted (add 2 tablespoons more if the mixture seems too dry)
  • 4 tablespoons granulated sugar

Cream Cheese Layer

  • 12 ounces cream cheese, softened (from 1-1/2 blocks)
  • 1 cup granulated sugar
  • 8 oz whipped topping, thawed

Gelatin Layer

  • 6 ounces raspberry gelatin (two 3-ounce boxes)
  • 2 cups boiling water
  • 12 ounces frozen raspberries

Garnish

  • Whipped topping, thawed
  • Fresh or frozen raspberries
  • Pretzels

Instructions

Crust

  1. Preheat the oven to 350 degrees F (175°C).
  2. Lightly spray a 13×9 baking dish with non-stick cooking spray.
  3. Add the pretzels to a food processor and finely crush or use a resealable bag and rolling pin to crush.
  4. Pour the crushed pretzels into a large bowl.
  5. Sprinkle with sugar.
  6. Melt the butter and mix it in with the pretzels and sugar until well combined.
  7. Spread the mixture into the prepared baking dish and press firmly into an even layer to create the crust.
  8. Bake for 10 minutes or until lightly golden.
  9. Remove and cool completely.

Cream Cheese Layer

  1. In a large bowl, beat together the cream cheese and sugar until fluffy, about 2 minutes.
  2. Fold in the whipped topping until completely combined.
  3. Spread the mixture evenly over the baked and cooled crust.
  4. Chill in the refrigerator for at least 1 hour or until set.

Gelatin Layer

  1. In a large bowl, dissolve the raspberry gelatin with the boiling water.
  2. Stir in the frozen raspberries until well combined.
  3. Chill in the refrigerator for about 15 minutes or until it is partially set.
  4. Pour the mixture over the cream cheese layer and spread it out to cover the cream cheese.
  5. Chill in the refrigerator until firm, for at least 3 hours or ideally overnight, until set.
  6. Serve with the toppings of your choice.
  7. Store any leftovers in the refrigerator.
