  1. First, ensure you are working with a very cold cake. I recommend freezing your cake for 1-2 hours for the perfect drip, as this helps prevent the ganache from sliding all the way down.
  2. Transfer the slightly warm ganache into a decorating squeeze bottle with a fine tip.
  3. Apply a test drip along an inconspicuous edge of the cake. It should drip down slowly and evenly.
  4. If the test drip is to your liking, continue applying drips along the side of the cake. Vary the amount of pressure to create drips of different lengths, achieving a dynamic look around the cake.
  5. Once the drips are complete around the perimeter, squeeze the remaining ganache onto the center of the top of the cake. Use an offset spatula to gently spread and smooth it out, covering the entire top surface.

Notes

  • If your ganache drips too quickly or all the way down the cake, it is still too warm. Allow it to cool further and test again. (If working with a frozen cake, you can often easily scrape off a failed drip with an offset spatula and re-smooth the frosting.)
  • If the ganache is too thick and doesn’t drip smoothly, warm it in the microwave for about 5-10 seconds. Cover the opening of the squeeze bottle, give it a little shake, and test again.
  • After applying the ganache, place the cake back into the freezer for 1-2 hours to allow the ganache to set completely before attempting to pipe any buttercream on top. If the ganache is still warm or fluid, the buttercream will slide off.
  • If using sprinkles, add them while the ganache is still warm and slightly tacky, allowing them to adhere properly.
