Ingredients

  

  • 3 pounds potatoes peeled and sliced (Yukon Gold or Russet recommended)
  • 1 small onion thinly sliced or diced
  • 1 pound cooked ham diced (leftover holiday ham or store-bought)
  • 2 cups cheddar cheese -freshly shredded for best melt
  • 10.5 ounces cheddar cheese soup (1 can, for ultra-cheesy sauce)
  • ½ cup heavy cream (for rich, creamy consistency)

Seasoning:

  • Kosher salt to taste
  • Black pepper freshly ground, to taste

Instructions

  • Prepare the Cooker: Lightly spray the interior of your slow cooker insert with cooking oil to prevent sticking.
  • Layer First Half: Add half of the thinly sliced potatoes, half of the sliced onion, half of the diced ham, and one-third (⅓) of the shredded cheese to the bottom of the cooker, in that order.
  • Season: Lightly sprinkle this layer with salt and pepper to taste.
  • Repeat Layers: Create a second identical layer using the remaining half of the onion, and ham, and another third (⅓) of the cheese.
  • Final Potato Layer: Finish with a final layer of the remaining sliced potatoes on top.
  • Prepare Sauce: In a small bowl, whisk the cheddar cheese soup and heavy cream together until smooth. Then, pour this creamy sauce evenly over the top of all the layers in the slow cooker.
  • Top with Cheese: Sprinkle the remaining one-third (⅓) of the shredded cheese over the sauce.
  • Cook: Cover the slow cooker with its lid. Cook on the “low” heat setting for 6 hours, or on “high” for 4 hours. Check for potato tenderness after 4 hours, as cooking times can vary.

Notes

Storage: Keep leftovers refrigerated in an airtight container for up to 3 days. Reheat in the microwave or oven at 350°F (175°C) until warmed through.
Variations: Feel free to experiment with different types of cooked ham or other meats. You can also vary the cheese by using Monterey Jack or Gruyere, and add extra veggies like peas, corn, or mushrooms for more flavor and nutrition. Consider adding a pinch of garlic powder or smoked paprika to the sauce for an extra kick.
