I often reflect on how dinner preparations have evolved. I remember my grandmother dedicating a significant portion of her day to cooking, from meticulous ingredient preparation to the inevitable pile of dishes afterward. Her dedication ensured we always had wonderful meals, a gesture I deeply cherish. However, modern life demands a different approach. We’re fortunate to have kitchen appliances that enable us to achieve delicious results with a fraction of the time and effort.
While pressure cookers have existed for generations, the early models were often intimidating and somewhat temperamental, which limited their widespread appeal. This perception began to shift dramatically with the advent of modern electric pressure cookers, particularly the Instant Pot, which revolutionized home cooking. These appliances brought safety, reliability, and incredible efficiency to the forefront, making pressure cooking accessible and desirable for busy households.

The Instant Pot truly transformed my dinner routine. On evenings when I have a narrow window between fetching the kids from school and rushing them to their extracurricular activities, a quick and wholesome meal is non-negotiable. It’s during these times that the Instant Pot proves indispensable, offering a delicious alternative to unhealthy drive-thru options. This particular recipe for BBQ chicken thighs showcases the pressure cooker’s ability to create tender, flavorful meat in record time.
Beyond its speed, the Instant Pot offers another fantastic advantage: the ability to enjoy BBQ chicken regardless of the weather. There’s no need to brave the elements or fire up the outdoor grill when it’s too cold or rainy. You can achieve that succulent, smoky BBQ flavor right in your kitchen, making it a year-round favorite. Moreover, unlike some elaborate pressure cooker recipes that demand multiple steps and constant attention, this dish aligns with my preference for minimal fuss. I believe the true beauty of these appliances lies in simplifying the cooking process, not complicating it.

My philosophy for pressure cooker meals is simple: “dump and go.” Whether it’s a slow cooker or an Instant Pot recipe, the goal is to streamline the cooking experience. If I can combine all the ingredients in the pot, set it, and let the appliance handle the rest, that’s a monumental win in my culinary book. This recipe perfectly embodies that ethos. You simply add all the components to the Instant Pot, turn it on, and let it work its magic. The most challenging part is the anticipation!
But even the waiting period is brief. By the time you’ve set the table, gathered your side dishes, and perhaps even tossed a quick salad, your flavorful BBQ chicken thighs will be ready to serve and enjoy. This efficiency ensures that you can spend less time in the kitchen and more quality time with your family, savoring a delicious homemade meal together. It’s truly a testament to the convenience and capability of modern kitchen appliances.
Frequently Asked Questions About Instant Pot BBQ Chicken Thighs
Can I make this recipe with bone-in chicken thighs?
Absolutely, you can adapt this recipe for bone-in chicken thighs, though it requires a slight adjustment to the cooking method. When using bone-in thighs, you’ll need to reduce the quantity to approximately four pieces to ensure they fit comfortably on the trivet inside your Instant Pot. This allows for even cooking and prevents overcrowding.
Once the thighs are placed on the trivet, set your Instant Pot to manual high pressure for 12 minutes. After the cooking cycle, allow for a natural pressure release for 5 minutes before performing a quick release of any remaining pressure. At this point, you can carefully remove the chicken and brush it generously with your favorite BBQ sauce. While not quite as “dump and go” as the boneless version, it’s still an incredibly straightforward and rewarding cooking experience, yielding incredibly tender and flavorful chicken.
What is the best way to store leftover BBQ Chicken Thighs?
Proper storage is key to enjoying your leftovers safely and deliciously. After serving, ensure any remaining BBQ chicken thighs are transferred to an airtight container as soon as they cool down, ideally within one hour of serving to inhibit bacterial growth. Label the container with the date before placing it in the refrigerator. This recipe will keep well for up to three days when stored correctly, making it ideal for meal prep or quick lunches. To reheat, simply warm in the microwave, oven, or air fryer until heated through.

How many people can this recipe serve?
The serving capacity of this recipe largely depends on individual portion sizes and the appetites of your diners. This particular recipe is designed to generously feed our family of five, often leaving us with delicious leftovers for the next day. With three young adult children, we typically find ourselves with very few leftovers from most meals, but this dish always provides ample portions for everyone to be satisfied.
One aspect I particularly appreciate about this recipe is its ability to provide a hearty meal while helping to manage portion control. When faced with such tasty dinners, it’s often easy to overindulge, but this recipe strikes a perfect balance, ensuring everyone gets enough without going overboard. It’s a wonderfully efficient way to feed a hungry crowd and ensure everyone leaves the table happy.
Can this recipe be doubled?
While the temptation to double a favorite recipe is strong, this particular Instant Pot BBQ Chicken Thigh recipe already yields a substantial amount – approximately 16 to 20 pieces of chicken, depending on the size of your boneless thighs. This quantity fills the pressure cooker pot quite adequately. Attempting to double the recipe would likely overcrowd the pot, potentially leading to uneven cooking and less than optimal results. For the best outcome, I strongly advise against trying to double this recipe. If you need to feed a larger gathering, consider making two separate batches to ensure consistent tenderness and flavor throughout.

Can I customize the sauce?
Absolutely! The beauty of this recipe lies in its versatility. While a classic BBQ sauce creates a comforting and familiar flavor, you are welcome to experiment with different sauces to suit your taste or what you have on hand. These Instant Pot chicken thighs would be equally delicious with a tangy teriyaki glaze, a savory Italian dressing, or even a spicy buffalo sauce for those who enjoy a kick. Feel free to get creative and make this recipe truly your own with your preferred flavor profile.
Step-by-Step: How to Make Instant Pot BBQ Chicken Thighs
- Prepare the Chicken: Carefully place the boneless, skinless (optional) chicken thighs in a single layer at the bottom of your Instant Pot.
- Season Generously: Evenly sprinkle the chicken with your chosen seasonings – granulated garlic, onion powder, salt, and pepper – ensuring each piece is well-coated for maximum flavor.
- Add Liquids: Pour the BBQ sauce and water over the seasoned chicken. The water is crucial for creating the steam needed for pressure cooking and preventing a “burn” notice.
- Pressure Cook: Secure the lid on your Instant Pot, ensuring the vent is in the sealing position. Set the cooker to manual high pressure for 15 minutes. Once cooking is complete, allow a natural pressure release for 5 minutes before performing a quick release of any remaining pressure.
- Thicken the Sauce: Carefully remove the cooked chicken from the pot and set it aside. Turn the Instant Pot to the “Sauté” function. Once the liquid begins to simmer, vigorously whisk the remaining BBQ sauce mixture in the pot for 2-3 minutes. This will help reduce and thicken the sauce to a desirable consistency.
- Serve: Ladle the rich, thickened BBQ sauce generously over the chicken thighs when serving. Garnish with fresh parsley for a touch of color and freshness.

- 3-Piece Bundt Pan Bundle Set: Great for baking in your Instant Pot.
- Stackable Stainless Steel Insert Steamer Pans: Perfect for cooking multiple dishes at once.

Can you cook Instant Pot BBQ chicken thighs from frozen?
Yes, one of the most remarkable features of the Instant Pot is its ability to cook frozen meats directly, making it an incredible convenience for busy cooks. If you find yourself needing to prepare dinner but your chicken thighs are still frozen solid, fear not!
To cook frozen boneless chicken thighs, simply increase the cooking time by 5 minutes. So, instead of 15 minutes, you’ll set your Instant Pot to manual high pressure for 20 minutes. Remember that the cooker will take a bit longer to come to pressure when starting with frozen ingredients, so factor that into your overall meal prep time. After the 20-minute cooking cycle, ensure you also perform a slow (natural) release as instructed for the thawed version to guarantee perfectly tender results.
Can I use homemade BBQ sauce for this recipe?
Absolutely! If you have a cherished family recipe for homemade BBQ sauce, by all means, use it. The quality of your BBQ sauce will significantly impact the final flavor of this dish, so choosing one you love, whether store-bought or homemade, is paramount. Personally, I find that the convenience of my favorite store-bought sauces often saves me valuable time without compromising on taste, allowing me to get dinner on the table even faster. However, if you enjoy the process of crafting your own sauce, this recipe is a perfect canvas for your culinary creation.

Notes
**High Altitude Adjustments: Because water boils at a lower temperature at higher altitudes, pressure cooking requires adjustments. For every 1,000 feet above 2,000 feet elevation, add 5 percent to your cook time. For example, if you live at 4,000 feet, add 10 percent to the cooking time. So, a recipe calling for 20 minutes would cook for 22 minutes. Even 1-2 minutes can make a significant difference in pressure cooking, unlike traditional methods.
For bone-in thighs:
Reduce the number of thighs to about 4 so they can be placed on the trivet. Set the cooker to manual high for 12 minutes, then natural release for 5 minutes before quick release. Brush with BBQ sauce afterward.
For cooking from frozen:
Increase the cook time by 5 minutes (totaling approximately 20 minutes under pressure). Note that it will take longer for the cooker to come to pressure when starting with frozen ingredients.
To make in the air fryer:
Cook chicken at 400 degrees Fahrenheit for 14-15 minutes, flipping halfway through.
While chicken cooks, combine sauce ingredients in a saucepan and simmer until thickened. Spread the thickened sauce over the chicken once it’s finished cooking.
