  • 1 lb ground sausage
  • 1 lb ground beef
  • 20 oz fresh ravioli (we used 4 cheese but you can use any flavor)
  • ½ cup minced onions
  • ½ tbsp garlic paste
  • ¼ cup butter
  • 8 cups baby spinach leaves
  • 56 ounces crushed tomatoes
  • 32 oz chicken stock
  • 1 tsp salt
  • 1 tsp pepper
  • 5 cups half & half
  • 6 oz shredded Parmesan cheese
  • Garnish with croutons & extra cheese when serving

Instructions

  1. Brown the sausage & ground beef in a large skillet over medium-high heat. Set aside.
  2. In a large stockpot, cook the ravioli to package directions and drain. Set aside.
  3. Add the minced onions to a separate large stockpot with the garlic paste and butter. Sauté until soft & caramelized.
  4. While the onions and garlic are cooking, pulse the spinach in a food processor until cut into small flake sized pieces.
  5. Once onions & garlic are soft, add the browned ground sausage and ground beef, chopped spinach, crushed tomatoes, chicken stock, salt, and pepper.
  6. Bring to a boil, stirring frequently. Continue to boil 5-10 minutes.
  7. Reduce heat and slowly add in the half & half – stir well.
  8. Bring the soup to a simmer – Do Not Boil. Simmer about 5 minutes.
  9. Add in Parmesan cheese & cooked ravioli.
  10. Stir until the cheese has melted. Serve with croutons & more cheese on top.
