Ingredients
- 1 pound Italian sausage (mild or spicy, casings removed)
- 1 tablespoon olive oil
- 1 yellow onion (diced medium)
- 3 cloves garlic (minced)
- 4 cups chicken broth (low-sodium)
- 30 ounces Cannellini beans (drained and rinsed, two 15-ounce cans)
- 1 bunch kale (stems removed and leaves chopped)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Optional: grated Parmesan cheese, for serving
Instructions
- Brown the sausage with the olive oil in a large pot over medium heat until cooked through. Approximately 5-7 minutes.
- Add the onion and cook until softened, about 5 minutes.
- Stir in the garlic and cook for an additional 1-2 minutes.
- Add the chicken broth, cannellini beans, kale, thyme, and oregano. Stir and bring to a boil.
- Reduce the heat to a gentle simmer and cook for 15 minutes.
- The soup is done when the kale is tender and the flavors have combined.
- Season with salt and pepper to taste.
- Serve with grated Parmesan if desired.
