However, fate intervened when I was brainstorming ideas for our August Recipe Round-Up with my wonderful colleague, Jessica. She reminded me that today marks National S’Mores Day, and just like that, I found the perfect, irresistible excuse to dive headfirst into a S’mores-inspired creation.

While I usually lean towards simpler recipes, this occasion called for something truly extraordinary. It whispered of indulgence, of going above and beyond the ordinary S’mores. This wasn’t just about making S’mores; it was about celebrating them in a grand, unforgettable way. And so, with a gleam in my eye and a spirit ready for a sweet adventure, I embarked on a culinary journey that resulted in something truly spectacular:

This isn’t just “overload”; it’s an “Ah-Maz-Ing” explosion of flavors and textures, a masterpiece of indulgence that will have everyone reaching for another slice. Imagine a rich, fudgy brownie base, topped with a generous layer of creamy, dreamy mocha ice cream, then crowned with gooey marshmallow creme, and finally sprinkled with crunchy graham cracker pieces and decadent chocolate chunks. It’s a symphony of sweet, cool, and comforting that truly defines dessert perfection.

This Frozen Mocha S’Mores Overload is truly a showstopper. It’s one of those delightful treats that you absolutely want to share. In fact, I highly recommend gathering a crowd of your favorite people to help you devour it, because leaving this tempting dessert in your fridge with only yourself for company could be a dangerous, albeit delicious, predicament. Yes, it’s 100% sinful, a glorious embrace of all things sweet and decadent. But let me assure you, every single bite is OH SO worth it!

  • 2 qts mocha ice cream (The star of our frozen delight! The rich coffee and chocolate notes of mocha ice cream perfectly complement the S’mores flavors, adding a cool, sophisticated depth and creamy texture.)
  • 1 sleeve graham crackers + more for sprinkles (These provide the signature crunch and honeyed flavor that are integral to any S’mores treat. Crushed for the crust and crumbled for garnish, they add texture and taste.)
  • 1 stick butter (Unsalted butter is preferred, as it binds the graham cracker crumbs together, creating a perfectly crumbly yet cohesive crust for our brownie. It adds a rich, buttery flavor.)
  • 2 jars marshmallow creme (The classic gooey, sweet marshmallow element that defines S’mores. This fluffy topping adds a delightful chewiness and a sweet balance to the mocha, creating that iconic campfire flavor.)
  • 2 oz block chocolate – roughly chopped (Dark or semi-sweet chocolate works best here. The rough chop ensures you get satisfying pockets of rich, melt-in-your-mouth chocolate in every bite, enhancing the “overload” with intense cocoa flavor.)

Instructions

  • 1. Prepare Brownie Base: Prepare your chosen brownie mix according to the package instructions. Pour the batter evenly into a well-greased 10-inch springform pan. Greasing the pan generously will ensure easy removal of your beautiful dessert later, preventing sticking.
  • 2. Create Graham Cracker Crust: In a separate bowl, melt one stick of butter. Crumble the sleeve of graham crackers finely (a food processor works wonders here) and add them to the melted butter. Mix until the butter is fully absorbed, and the crumbs are moist and fragrant. This forms a delicious, buttery layer.
  • 3. Layer Crust on Brownie: Carefully spread the graham cracker mixture evenly over the top of the brownie batter in the springform pan. This creates a delightful, crunchy topping for the brownie base, adding another layer of texture.
