Ingredients

  

  • cups unsalted butter room temperature
  • 1 cup vegetable shortening
  • 1 cup natural cocoa powder not Dutch processed
  • 8 cups confectioner’s sugar (powdered sugar), sifted
  • ¼ cup whole milk or half-and-half
  • 2 teaspoons pure vanilla extract

Instructions

  • Combine the room-temperature butter, shortening, and cocoa powder together in a large mixing bowl or the bowl of your stand mixer fitted with the paddle attachment.
  • On low speed, slowly mix until the cocoa powder is fully incorporated and the mixture is no longer powdery. Increase the speed to medium and beat until the mixture is light, creamy, and well aerated, about 2-3 minutes.
  • Reduce the mixer speed to low. Gradually add the confectioner’s sugar, one cup at a time, allowing each addition to fully blend before adding more. Mix until all the sugar is incorporated and the mixture is smooth.
  • With the mixer still on low speed, slowly add the milk and vanilla extract. Once fully added, increase the mixer speed to medium-high and beat the buttercream for about two minutes. This final beating step will make the frosting incredibly light, fluffy, and smooth. Scrape down the sides of the bowl as needed.

Notes

When working with fine powders like cocoa powder and confectioner’s sugar, it is absolutely essential to start your mixer slowly to prevent a cloud of powder from escaping the bowl and coating your entire kitchen. A good trick is to sometimes place the powders at the bottom of your mixing bowl before adding the wet ingredients. Alternatively, you can use a sturdy, heavy-duty rubber spatula to gently fold the powdered ingredients into the wet mixture until most of the powder is absorbed, then switch to your mixer to beat it thoroughly until light and fluffy. This method significantly helps to eliminate a much larger mess and ensures all your delicious ingredients end up in the frosting!
