Combine the water, basil and granulated sugar in a saucepan.
Bring the mixture to a boil and cook until the granulated sugar has dissolves. Remove from the heat and let the simple syrup infuse for 30 minutes, until cooled to room temperature.
Pour the simple syrup through a fine-mesh sieve.
Use a spatula to fresh the basil into the sieve to extract as much flavor as possible.
Discard the basil leaves.
Use the basil simple syrup or refrigerate in a glass jar until ready to use.

In a small saucepan, combine the granulated sugar, water and basil leaves.

Heat over medium heat, stirring constantly, until the sugar is completely dissolved, about 5 minutes.

Remove the saucepan from the heat and allow the syrup to cool to room temperature, about 30 minutes.

Once cooled, strain the syrup through a fine-mesh sieve into a clean glass bottle or jar, discarding the basil leaves. Press the basil leaves into the sieve to extract all the flavor.
